Serves 4.<br \/>\n100ml extra virgin olive oil \u2022 2 large onions, cut through the core into 8 wedges \u2022 2 red peppers, cut into 3cm cubes \u2022 1 garlic head, halved horizontally \u2022 500g cherry tomatoes \u2022 1 preserved lemon, chopped \u2022 1 tablespoon coriander seeds, crushed \u2022 120g feta, roughly crumbled into large chunks \u2022 \u00bc cup (40g) pine nuts or any nuts of choice \u2022 1 tablespoon harissa paste \u2022 \u00bd cup roughly chopped fresh coriander, for garnish.<br \/>\nPreheat the oven to 200\u00b0C.<br \/>\nPlace the olive oil, onions, peppers, garlic, tomatoes, preserved lemon and coriander seeds in a large roasting pan and give everything a good stir.<br \/>\nBake for 25 minutes, stirring 2 &#8211; 3 times, or until the vegetables are softened and well charred. Remove the garlic halves and use a small knife to remove the cloves, adding them back into the roasting pan. Discard the skins.<br \/>\nStir in the feta, pine nuts and harissa paste and bake for another 10 minutes. They make perfect appetizers. Serves 6\u20138.<br \/>\n2\u20133 ripe, but firm, pears \u2022 1 x 250g square sheet puff pastry \u2022 \u00bd cup cream cheese \u2022 \u00bd cup gorgonzola \u2022 \u00bc cup chopped pecans \u2022 Fresh rosemary \u2022 Honey, to drizzle \u2022 Fresh rosemary \u2022 Olive oil, to drizzle<br \/>\nPreheat the oven to 200\u00b0C.<br \/>\nThinly slice the pears lengthwise using a knife or a mandolin, then cut each slice in half. Roll the sheet of puff pastry flat.
