{"id":13621,"date":"2023-08-23T12:00:27","date_gmt":"2023-08-23T10:00:27","guid":{"rendered":"https:\/\/getitmagazine.co.za\/bloemfontein\/?p=13621"},"modified":"2023-08-23T11:47:40","modified_gmt":"2023-08-23T09:47:40","slug":"healthy-nutritious-and-quick-to-whip-up","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/bloemfontein\/blog\/2023\/08\/23\/healthy-nutritious-and-quick-to-whip-up\/","title":{"rendered":"Healthy, nutritious and quick to whip up"},"content":{"rendered":"<h4><strong>Enjoy this delicious salad with a little extra&#8230; Dairy works well with any vegetable and gives a good boost to the overall nutrient content of the meal.<\/strong><\/h4>\n<p><strong>Beetroot, feta &amp; walnut salad<\/strong><\/p>\n<p>Serves: 6-8 people<\/p>\n<p>Portion size: 120g<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>For the salad:<\/p>\n<ul>\n<li>450 g (5 medium size) cooked and cubed beetroot &#8211; you can use pre-cooked one\u2019s bought from a store<\/li>\n<li>100 g Danish-style feta cheese<\/li>\n<li>3 big handfuls (about 80 g) fresh rocket<\/li>\n<li>3 tbsp (54 g) walnuts &#8211; chopped (pecan nut is a great substitute)<\/li>\n<\/ul>\n<p>Lemon vinaigrette:<\/p>\n<ul>\n<li>125 ml (1\/2 cup) olive oil<\/li>\n<li>50 ml juice of one medium sized lemon zest of one lemon<\/li>\n<li>2 heaped tbsp (130 g) honey<\/li>\n<li>1 tbsp (12 g) Dijon mustard (optional)<\/li>\n<li>salt and ground black pepper to taste<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>In a small jug or jar, whisk (or shake by popping the lid on the jar) all the ingredients for the lemon vinaigrette together.<\/li>\n<li>Put the rocket in a salad bowl or on a serving platter.
