When I had to think about something I grew up with, that gave me a sense of nostalgia, my mind went straight to Sundays in our family kitchen and more specifically, to my mom\u2019s Malva pudding and custard. In this piece, I\u2019m sharing a recipe that\u2019s been part of my life for as long as I can remember and one that still brings everyone to the table, even now.<\/h3>\n

\"\"<\/p>\n

Sundays in the Fortuin household were always about family. From church to lunch and eventually dessert \u2013 the day always followed a familiar rhythm. And if there was one part we all looked forward to, it was dessert.<\/p>\n

My mom, who doesn\u2019t consider herself a baker, had one dish that everyone counted on: Malva pudding with her fool-proof homemade custard. It was soft, sweet, and always served warm. Paired with her simple custard, it became something of a staple and easily my dad\u2019s favourite part of the meal.<\/p>\n

It\u2019s one of those dishes that just feels right in winter. The kind of dessert that fills the kitchen with warmth and brings people back to the table for seconds.<\/p>\n

As I got older, the baton of Sunday pudding-making was passed down to me. I\u2019ve made it so many times now I know the recipe by heart. And like most hand-me-down recipes, for my own personal touch I add a dash of vanilla essence<\/strong> in both the pudding and the sauce, a small addition that somehow makes it feel more mine.<\/p>\n

Here\u2019s how I make it:<\/strong><\/h3>\n

For the batter:<\/strong><\/h3>\n
    \n
  • 1 egg<\/li>\n
  • 1 cup sugar<\/li>\n
  • 1 cup flour<\/li>\n
  • 1 cup milk<\/li>\n
  • 1 tbsp apricot jam<\/li>\n
  • 1 tsp baking soda<\/li>\n
  • 1 tsp brown vinegar<\/li>\n
  • 1 tsp salt<\/li>\n
  • 1 tsp vanilla essence<\/li>\n<\/ul>\n

    For the sauce:<\/strong><\/h3>\n
      \n
    • 250g margarine<\/li>\n
    • 1 cup ideal milk<\/li>\n
    • 1 cup sugar<\/li>\n
    • 1 tsp vanilla essence<\/li>\n
    • \u00bd cup boiled water<\/li>\n<\/ul>\n

      <\/h4>\n

      \"\"<\/p>\n

      Method:<\/strong><\/h4>\n
        \n
      1. Preheat oven to 180\u02daC.<\/li>\n
      2. Beat the egg and sugar until light in colour.<\/li>\n
      3. Sift flour and salt, then add to the egg mixture bit by bit, alternating with the milk.<\/li>\n
      4. In a separate bowl, mix the jam, vinegar, vanilla essence, and baking soda. Stir into the batter.<\/li>\n
      5. Pour into a greased oven dish and bake until golden and cooked through (test with a toothpick).<\/li>\n
      6. For the sauce: combine all sauce ingredients in a saucepan, bring to a boil, and pour over the hot pudding straight from the oven.<\/li>\n<\/ol>\n

        Mom\u2019s fool-proof custard<\/strong><\/h3>\n

        Makes about 500ml<\/em><\/p>\n

        You\u2019ll need:<\/strong><\/h4>\n
          \n
        • 625ml milk<\/li>\n
        • 2 tbsp custard powder<\/li>\n
        • 2\u20134 tbsp sugar (to taste)<\/li>\n<\/ul>\n

          <\/h4>\n

          Method:<\/strong><\/h4>\n
            \n
          1. Mix 125ml of the milk with custard powder and sugar to make a slurry.<\/li>\n
          2. Heat the remaining 500ml milk in a microwave-safe jug until just boiling (around 3\u20134 minutes).<\/li>\n
          3. Slowly stir in the slurry, one spoon at a time, to avoid the custard boiling over.<\/li>\n
          4. Return to the microwave for 2\u20133 minutes, stirring every 30\u201345 seconds until it thickens.<\/li>\n<\/ol>\n

            It\u2019s a simple recipe, but one that holds a lot of memories. I still make it today \u2013 sometimes on a Sunday, sometimes just because \u2013 and every time, it brings a little bit of home back into the room.<\/em><\/p>\n
