Also, today is National Hot and Spicy Day \u2013 and frankly, we think it\u2019s a celebration that deserves a proper fork in the air.<\/strong><\/h4>\n<p>Naturally, we couldn\u2019t resist joining the flavour party with a dish that brings the heat and gives mushrooms their moment in the spotlight. Because let\u2019s be honest \u2013 they\u2019re the unsung heroes of hearty winter cooking.<\/p>\n<p>Our Harissa Butter Roasted Mushrooms with Spicy Lemon Yoghurt\u00a0is rich, bold, and just the right kind of fiery \u2013 perfect for anyone who likes their comfort food with a kick (and their mushrooms golden and glorious!)<\/p>\n<h4><strong>Harissa butter roasted mushrooms with spicy lemon yogurt\u00a0<\/strong><\/h4>\n<p>Serves 6<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>Quick pickled onions:<\/li>\n<li>1 red onion, very thinly sliced<\/li>\n<li>\u00bd cup apple cider vinegar<\/li>\n<li>1 Tbsp sugar<\/li>\n<li>1 tsp sea salt flakes<\/li>\n<\/ul>\n<p><strong>Yoghurt sauce:<\/strong><\/p>\n<ul>\n<li>250ml plain double cream yoghurt<\/li>\n<li>1 small clove garlic, finely grated<\/li>\n<li>2 Tbsp lemon juice<\/li>\n<li>2 tsp Aleppo pepper*<\/li>\n<li>Good pinch of sea salt<\/li>\n<\/ul>\n<p>*Aleppo pepper is available at specialty delis \/ artisanal grocers \/ spice stores.<\/p>\n<p>If you cannot find Aleppo pepper simply substitute with 1 tsp sweet paprika and \u00bc tsp cayenne pepper. Mix together.<\/p>\n<p><strong>Mushrooms:<\/strong><\/p>\n<ul>\n<li>125g butter, softened<\/li>\n<li>125g harissa paste<\/li>\n<li>12 large portobello mushrooms<\/li>\n<\/ul>\n<p><strong>To serve:<\/strong><\/p>\n<ul>\n<li>Store bought flatbread \/ naan or pita<\/li>\n<li>Fresh coriander<\/li>\n<li>Lime wedges<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>For the quick pickled onions: Combine all the ingredients in a glass jar and give it a good shake. Make sure the onions are submerged. Leave at room temperature while preparing the rest.<\/p>\n<p><strong>For the yoghurt sauce:<\/strong><\/p>\n<p>Combine all the ingredients together and taste to adjust seasoning. Keep in the fridge until serving.<\/p>\n<p><strong>For the mushrooms:<\/strong><\/p>\n<p>Stir the softened butter and harissa paste together until well combined. Taste the harissa paste you are using for seasoning &#8211; you may or may not need to add a little extra salt and pepper. Preheat oven to 200\u00b0C with the fan on. Line a large baking tray with baking paper. Place portabellos on prepared tray and brush generously with harissa butter. Roast for about 7-10 minutes or until just tender.<\/p>\n<p>While the mushrooms are roasting, warm or toast some flatbread and prepare the other toppings.<\/p>\n<p>Serve harissa butter mushrooms piled onto warm flatbread with generous dollops of the spicy lemon yoghurt.
