Spier Wine Farm shared their version with us.<\/span><\/strong><\/p>\n<p class=\"Descriptorbody\"><span lang=\"EN-US\">A little less sweet than usual \u2013 they leave out the dried fruit and apricot jam \u2013 \u00a0this is a gorgeous \u00a0savoury dish with a deliciously nutty, complex flavour. Serve it this weekend, with crisp white wine \u2026 we suggest the Spier Signature Chenin Blanc. <\/span><\/p>\n<p class=\"Descriptorbody\"><b><span lang=\"EN-US\">No-raisin beef bobotie with curry leaves<br \/>\n<\/span><\/b><span lang=\"EN-US\">Serves 6<\/span><\/p>\n<p class=\"Descriptorbody\"><strong><span lang=\"EN-US\">Ingredients: <\/span><\/strong><\/p>\n<p class=\"Descriptorbody\"><span lang=\"EN-US\">30 ml (2 tablespoons) vegetable oil<br \/>\n<\/span><span lang=\"EN-US\">2 onions, finely chopped<br \/>\n<\/span><span lang=\"EN-US\">2 cloves garlic, finely grated<br \/>\n<\/span><span lang=\"EN-US\">15 ml (1 tablespoon) fresh ginger, finely grated<br \/>\n<\/span><span lang=\"EN-US\">20 ml (4 teaspoons) mild curry powder<br \/>\n<\/span><span lang=\"EN-US\">5 ml (1 teaspoon) ground turmeric<br \/>\n<\/span><span lang=\"EN-US\">5 ml (1 teaspoon) ground coriander<br \/>\n<\/span><span lang=\"EN-US\">5 ml (1 teaspoon) ground cumin<br \/>\n<\/span><span lang=\"EN-US\">1 kg lean beef mince<br \/>\n<\/span><span lang=\"EN-US\">salt &amp; black pepper to taste<br \/>\n<\/span><span lang=\"EN-US\">30 ml lemon juice<br \/>\n<\/span><span lang=\"EN-US\">60 ml fruit chutney<br \/>\n<\/span>30 ml Worcestershire sauce<br \/>\n<span lang=\"EN-US\">30 ml tomato paste<br \/>\n<\/span><span lang=\"EN-US\">2 slices white bread, soaked in water<br \/>\n<\/span><span lang=\"EN-US\">125 ml milk<br \/>\n<\/span><span lang=\"EN-US\">1 x egg<br \/>\n<\/span><span lang=\"EN-US\">12 curry leaves (fresh or dried)<\/span><\/p>\n<p><strong>Method:<\/strong><\/p>\n<ul>\n<li>In a large pot, heat the oil over medium heat and add the onions. Fry until soft and translucent, then add the garlic and ginger and fry for another 30 seconds.<\/li>\n<li>Add the curry powder, turmeric, coriander and cumin, and fry, stirring, for a minute.<\/li>\n<li>Divide the beef mince into 3 batches and add 1 batch at a time, turning up the heat to high and stirring after each addition and waiting for the meat to change colour from pink to grey (do not brown) before adding more.<\/li>\n<li>When all the meat has changed colour, season generously with salt &amp; pepper, then add the lemon juice, chutney, Worcestershire sauce, tomato paste and soaked bread (break up the bread into chunks &#8211; it will continue to break down while cooking).<\/li>\n<li>Stir well, then turn down the heat to low and cover with a lid. Cook slowly for 25 minutes, scraping the bottom often to prevent burning. In the meantime, pre-heat your oven to 180 \u00b0C.<\/li>\n<li>In a medium jug, mix the milk and egg well and season with salt &amp; pepper.<\/li>\n<li>When the meat mixture is ready, transfer it to a suitable deep baking dish and smooth the top evenly. Pour over the milky egg mixture and dot all over with curry leaves.<\/li>\n<li>Bake at 180 \u00b0C for 35 minutes or until golden and bubbly on top.<\/li>\n<li>Remove and serve hot with rice, fresh coriander, toasted coconut, chutney and tomato salsa (or your choice of sambals).<\/li>\n<\/ul>\n<p>About the wine: <strong>Spier Signature Chenin Blanc<\/strong> is crisp and fruity Chenin Blanc, and is perfect with this mildly spiced bobotie.
