I let my LG NeoChef do all the hard work for me.\u201d<\/p>\n<p><strong>15-minute sweetcorn and cheddar risotto<\/strong><\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<p><strong>Ingredients <\/strong><\/p>\n<p>1 Tbs olive oil<br \/>\n20g butter<br \/>\n1 onion, finely chopped<br \/>\n2 garlic cloves, finely crushed<br \/>\n2 tsp chopped thyme<br \/>\n1 1\/2 cups Arborio or risotto rice<br \/>\n4 cups vegetable stock<br \/>\n1 tin creamed sweetcorn<br \/>\n100g mature cheddar, grated<br \/>\nSalt and pepper<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Place the olive oil, butter, onion, garlic and thyme into a large microwave-safe dish.<\/li>\n<li>Microwave on full power for 2 minutes.<\/li>\n<li>Add the rice and 2 cups of stock, stir well, then return to the microwave for 3 minutes on full power.<\/li>\n<li>Stir in the creamed sweetcorn and return to the microwave for 6 minutes, stirring after 3 minutes.<\/li>\n<li>Stir in the remaining stock and cheese, then return to the microwave for another 2 minutes.<\/li>\n<li>Leave to rest for 2 minutes, then stir. Season to taste with salt and pepper, then serve.<\/li>\n<\/ol>\n<p>Although this microwave risotto only takes 15 minutes to make, there\u2019s no sacrificing flavour here \u2013 the result is a deliciously creamy, cheesy and satisfying meal that the whole family will love.<\/p>\n<p>Another winner from Zola?
