Ahead of the show, he shared his simple, yet delicious recipe for a classic <strong>Ratatouille<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-11554\" src=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/10\/Simon_Toohey_2-267x400.jpg\" alt=\"\" width=\"267\" height=\"400\" srcset=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/10\/Simon_Toohey_2-267x400.jpg 267w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/10\/Simon_Toohey_2-682x1024.jpg 682w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/10\/Simon_Toohey_2-768x1153.jpg 768w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/10\/Simon_Toohey_2-1023x1536.jpg 1023w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/10\/Simon_Toohey_2-696x1045.jpg 696w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/10\/Simon_Toohey_2-1068x1603.jpg 1068w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/10\/Simon_Toohey_2-280x420.jpg 280w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/10\/Simon_Toohey_2.jpg 1254w\" sizes=\"auto, (max-width: 267px) 100vw, 267px\" \/><\/p>\n<p><u>Ingredients:<\/u><br \/>\n50ml olive oil<br \/>\n2 banana eggplants<br \/>\n4 roman tomatoes<br \/>\n3 yellow zucchini<br \/>\n3 green zucchini<br \/>\n1 red capsicum<br \/>\n1 brown onion<br \/>\n3 garlic cloves<br \/>\n2 sprigs rosemary<br \/>\nSalt and white pepper<\/p>\n<p><u>Method:<\/u><br \/>\nSet oven to 150\u00b0C.\u00a0 Take two of the tomatoes, slice and place in a pot along with 1 yellow zucchini, 1 green zucchini, the red capsicum, the onion and the garlic all roughly chopped up.\u00a0 Cook these down in a pot with 30ml of olive oil and a dash of water, salt and white pepper.\u00a0 Stirring occasionally so it doesn\u2019t stick to the bottom.<br \/>\nThinly slice the leftover tomatoes, zucchini, tomato and the eggplant about 3ml thick.<br \/>\nOnce the pot mixture has cooked and broken down and lost a lot of its moisture, place it in a blender and blitz to a smooth paste.<br \/>\nPour the blitzed sauce in a non-stick pan then create layers of the sliced tomatoes, zucchini and eggplant alternating them in each layer and place them on top of the sauce, starting from outside the pan and working all the way around until you have reached the middle.
