Shelain Horn, gave us her delicious <strong>Vegan Burger<\/strong> recipe:<\/p>\n<p><u>Ingredients<\/u><br \/>\n100g walnuts<br \/>\n165g cooked\/canned chickpeas<br \/>\n1 tbsp soy sauce<br \/>\n2 tbsp tomato paste<br \/>\n1 tbsp vegan mayonnaise<br \/>\n1 tsp hoisin sauce<br \/>\n1 tsp Dijon mustard<br \/>\n\u00bd tsp garlic powder<br \/>\n\u00bd tsp onion powder<br \/>\n1 tsp salt<br \/>\n\u00bc tsp black pepper<br \/>\n\u00bd tsp smoked\/Spanish paprika<br \/>\n\u00bd tsp braai spice<br \/>\n1 cup cooked couscous<br \/>\n75g flour<\/p>\n<p><u>Method<\/u><br \/>\nBlend the chickpeas with the soy sauce and tomato paste in a food processor until well mixed.<br \/>\nAdd the walnuts and blend until the nuts are chopped into small bits.<br \/>\nTransfer the mixture to a bowl and mix in the vegan mayo, hoisin sauce, mustard, garlic powder, onion powder, salt, pepper, paprika and braai spice.<br \/>\nAdd the couscous and the flour and stir until combined.<br \/>\nKnead the mixture for about 3 minutes until the flour has started to bind the mixture together.<br \/>\nDivide the mixture into 4 &#8211; 6 equal quantities and shape into patties.<br \/>\nFry the patties in a little oil.<br \/>\nBaste them with some vegan BBQ sauce while cooking if desired.<br \/>\nLoad up a fresh burger roll with all your favourite toppings and enjoy.<\/p>\n<p><u>Chef&#8217;s Notes<\/u><br \/>\nThis mixture can also be shaped into balls, shallow fried and served as vegan meatballs.<br \/>\nUncooked patties can be frozen for up to three months.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>To celebrate World Vegan Month, chefs from the Capsicum Culinary Studio have shared their favourite meat- and-dairy-free recipes.
