Brining a turkey overnight in a solution of salt and water ensures a moist and flavourful turkey. Whisk in the whiskey off the heat. Sweet and sour, it is traditionally served with cold meats and is excellent with lamb, pork and with just about any game. This Woodford Reserve inspired orange glaze is sure to tantalise the senses.<\/p>\n<table width=\"1209\">\n<tbody>\n<tr>\n<td width=\"529\"><strong>Ingredients<\/strong><\/td>\n<td width=\"680\"><strong>Method<\/strong><\/td>\n<\/tr>\n<tr>\n<td width=\"529\"><strong>Woodford Reserve Bourbon Orange Glaze:<\/strong><\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1 ham (half pit ham, cut in half and then cut into 1\/4 inch slices)<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1 cup frozen orange juice concentrate, thawed<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 teaspoon ground cinnamon<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 teaspoon ground allspice<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 teaspoon white pepper<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 teaspoon ground cloves<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 teaspoon chili powder<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 cup Woodford Reserve Bourbon<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 cup sorghum<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 Splash of soy sauce<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 Salt to taste<\/td>\n<td width=\"680\">&nbsp;<\/p>\n<p>Place all ingredients for glaze in a small saucepan. Bring to a simmer over medium heat and reduce to a syrup.<\/p>\n<p>Arrange ham slices in a large shallow baking dish and pour the glaze over the top. Cover with foil. Bake for 45 minutes to 1 hour at 180C degrees.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/td>\n<\/tr>\n<tr>\n<td width=\"529\"><strong>Blackberry Cumberland Sauce:<\/strong><\/p>\n<p><em>(Makes about 2 cups)<\/em><\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1 tablespoon butter<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 cup minced onion<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 170 grams blackberry jam<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/2 of a (340g) jar red currant jelly<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1 tablespoon grated orange zest<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 cup orange juice<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1\/4 cup lemon juice<\/p>\n<p>\u25cf\u00a0\u00a0\u00a0\u00a0\u00a0 1 tablespoon Dijon mustard<\/p>\n<p>\u25cf\u00a0 \u00a0 1 cup Woodford Reserve Bourbon<\/td>\n<td width=\"680\">&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Saut\u00e9\u00b4 onion in butter in a medium saucepan. Add jam and jelly and stir until melted. Add remaining ingredients and bring to a simmer, stirring constantly. Form into balls and refrigerate overnight.<\/p>\n<p>2) Line a tray with waxed paper. Melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Using a fork, dip the balls into the melted chocolate to coat all over.
