{"id":15808,"date":"2021-05-04T13:09:29","date_gmt":"2021-05-04T11:09:29","guid":{"rendered":"https:\/\/getitmagazine.co.za\/highway-berea\/?p=15808"},"modified":"2024-05-31T10:10:19","modified_gmt":"2024-05-31T08:10:19","slug":"good-for-the-soul-cassserole","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/highway-berea\/blog\/2021\/05\/04\/good-for-the-soul-cassserole\/","title":{"rendered":"Good for the soul cassserole!"},"content":{"rendered":"<p>For those looking for a tasty meat-free meal, we know you&#8217;ll love this winner dinner by local chef and experimental foodie, Isla Rechner who has just returned to South Africa after spending almost a decade as the group pastry chef for celebrity chef Bill Granger in the UK and recently launched Isla&#8217;s where she tailor-makes food and training services for restaurants, as well as caters privately for women\u2019s lunches and bespoke dinners.<\/p>\n<p>&#8220;The mercury has dipped and I for one am greeting the autumnal air with a cosy embrace.\u00a0 The crisper evenings demand heartier dinners but indulgent doesn\u2019t necessarily mean it has to be meat-centric.\u00a0 This vegan black bean casserole with roasted butternut and pickled red cabbage is good for the soul as well as the body.&#8221;<\/p>\n<p><strong><u>Vegan black bean casserole, spicy butternut, pickled red cabbage and coriander oil \u2013 Serves 4<\/u><\/strong><\/p>\n<p><strong><u>Black beans <\/u><\/strong><\/p>\n<p>1 cup dry black beans<br \/>\n3 cups water<br \/>\n1 small onion<br \/>\n2 garlic cloves<br \/>\n2 bay leaves<br \/>\n3 cups water<\/p>\n<p><strong><u>Roasted butternut <\/u><\/strong><\/p>\n<p>250g butternut cut into 1cm cubes<br \/>\n30ml oil<br \/>\n\u00bd teaspoon cumin seeds, toasted and crushed<br \/>\n\u00bd teaspoon coriander seeds, toasted and crushed<br \/>\n1 teaspoon chilli flakes<\/p>\n<p><strong><u>Pickled red cabbge<\/u><\/strong><\/p>\n<p>1 small red cabbage<br \/>\nJuice of 2 limes<\/p>\n<p><strong><u>Coriander oil <\/u><\/strong><\/p>\n<p>\u00bd cup fresh coriander<br \/>\n\u00bc cup oil<br \/>\nJuice of 1 lime<\/p>\n<p><strong>For assembly<\/strong><\/p>\n<p><em>2 spring onions, sliced <\/em><br \/>\n<em>Micro herbs to garnish <\/em><br \/>\n<em>Coconut cream<\/em><\/p>\n<p><strong><u>Method:<\/u><\/strong><\/p>\n<ul>\n<li>First thing you will need to do is soak the black beans overnight, you may be tempted to use tinned but its definitely worth doing the process yourself<\/li>\n<\/ul>\n<p><em><u>Next day <\/u><\/em><\/p>\n<ul>\n<li>Strain the black beans and rinse<\/li>\n<li>In a medium sized pot, place beans, garlic cloves, onion, bay leaves and three cups of water<\/li>\n<li>On a low to medium heat, simmer beans for 90 minutes covered.<\/li>\n<li>Remove lid and simmer for an additional 30 minutes. Season to taste.<\/li>\n<li>Whilst the beans are simmering, get onto your red cabbage<\/li>\n<li>In an airtight container place red cabbage and lime juice, mixing until combined. Leave to pickle in the fridge for at least an hour.<\/li>\n<li>Preheat oven to 200 degrees Celsius<\/li>\n<li>Toss butternut, spices and oil together<\/li>\n<li>Place in a roasting tin and cook for 30 minutes<\/li>\n<li>Now onto the coriander oil, pop all ingredients into a blender and blitzed until smooth<\/li>\n<\/ul>\n<p><em><u>Assembly<\/u><\/em><\/p>\n<ul>\n<li>Remove the butternut from the oven. Toss black beans, pickled red cabbage and butternut together.
