Top 30 Miss SA contender Andile Mazibuko loves nothing more than a plate of creamy samp and oxtail especially when sitting around the table for a lazy Sunday lunch with family and friends.<\/p>\n

Mazibuko, who hails from eMabedlane in Ulundi, Kwa-Zulu Natal, but currently lives in Berea, says: \u201cSundays are not Sundays for me without what we call \u2018seven colours\u2019 \u2013 two dishes that are a reflection of every African home.\u201d<\/p>\n

Here the 23-year-old, a final year homoeopathy student at the Durban University of Technology, shares her mother Sibongile\u2019s much-loved beef stew and steamed bread recipes \u2013 two of her favourite dishes.<\/p>\n

Sibongile Mazibuko\u2019s <\/strong>Beef Stew <\/strong><\/p>\n

Ingredients<\/u><\/p>\n

1kg stewing beef, cut into bite-size pieces
\n1 onion, chopped
\n1 tbsp oil
\n2 bell peppers, chopped
\n1 large garlic clove, chopped
\n1 tomato, diced
\n2 beef stock cubes
\n4 carrots, sliced
\n1 cup of sweetcorn
\n2 bay leaves
\n1 tsp BBQ spice
\n1 tsp paprika
\n1 tsp thyme
\n2 bay leaves
\nSalt and pepper to taste<\/p>\n

Method
\n<\/u>Add oil to a large pan and over a medium to high heat, saut\u00e9 onion, peppers and garlic until soft
\nAdd the beef and fry till brown, stirring to coat with the onion, peppers and garlic
\nOnce beef has browned, add all the spices, the diced tomato, the 2 beef stock cubes and a cup of hot water
\nReduce the heat, pop the lid on the pan and cook for 1 hour
\nThen add the sweetcorn and carrots and cook for a further 15 minutes
\nAdd salt and pepper to taste before plating and serving hot with your favourite vegetables or a salad.<\/p>\n

Sibongile Mazibuko\u2019s <\/strong>Steamed Bread<\/strong><\/p>\n

Ingredients<\/u><\/p>\n

4 cups of flour
\n1 pack of yeast
\n2 tbsp of sugar
\n1 tsp salt
\n500ml lukewarm water
\n2 tbsp melted butter
\n\u00bc cup sweetcorn<\/p>\n

Method<\/u><\/p>\n

Add all the dry ingredients to a large bowl and mix well.
\nStir in the butter and then gradually add water and mix with your hands until a dough forms (the dough should not be sticky or dry).
\nPlace the dough in a clean steel bowl, cover with a cloth and put it in a warm area for 45 minutes to prove.
\nAfter 45 minutes the dough should have risen twice its initial size
\nPound it down and then add the sweetcorn and mix well.
\nForm a ball with the dough and place in a steel bowl pre-greased with butter or oil
\nPlace the bowl in a pot half-filled with boiling water, making sure the water does not rise above the bowl
\nSteam for 45 minutes before removing bread and serving hot with the beef stew<\/p>\n

The cost is R5 for one vote with a selection of bundles available. Voting bundles include free votes and cannot be split between different contestants.
