{"id":17597,"date":"2021-07-26T09:47:38","date_gmt":"2021-07-26T07:47:38","guid":{"rendered":"https:\/\/getitmagazine.co.za\/highway-berea\/?p=17597"},"modified":"2024-05-31T10:10:08","modified_gmt":"2024-05-31T08:10:08","slug":"the-seven-colours-of-sunday","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/highway-berea\/blog\/2021\/07\/26\/the-seven-colours-of-sunday\/","title":{"rendered":"The Seven Colours of Sunday"},"content":{"rendered":"<p>Top 30 Miss SA contender Andile Mazibuko loves nothing more than a plate of creamy samp and oxtail especially when sitting around the table for a lazy Sunday lunch with family and friends.<\/p>\n<p>Mazibuko, who hails from eMabedlane in Ulundi, Kwa-Zulu Natal, but currently lives in Berea, says: \u201cSundays are not Sundays for me without what we call \u2018seven colours\u2019 \u2013 two dishes that are a reflection of every African home.\u201d<\/p>\n<p>Here the 23-year-old, a final year homoeopathy student at the Durban University of Technology, shares her mother Sibongile\u2019s much-loved beef stew and steamed bread recipes \u2013 two of her favourite dishes.<\/p>\n<p><strong>Sibongile Mazibuko\u2019s <\/strong><strong>Beef Stew <\/strong><\/p>\n<p><u>Ingredients<\/u><\/p>\n<p>1kg stewing beef, cut into bite-size pieces<br \/>\n1 onion, chopped<br \/>\n1 tbsp oil<br \/>\n2 bell peppers, chopped<br \/>\n1 large garlic clove, chopped<br \/>\n1 tomato, diced<br \/>\n2 beef stock cubes<br \/>\n4 carrots, sliced<br \/>\n1 cup of sweetcorn<br \/>\n2 bay leaves<br \/>\n1 tsp BBQ spice<br \/>\n1 tsp paprika<br \/>\n1 tsp thyme<br \/>\n2 bay leaves<br \/>\nSalt and pepper to taste<\/p>\n<p><u>Method<br \/>\n<\/u>Add oil to a large pan and over a medium to high heat, saut\u00e9 onion, peppers and garlic until soft<br \/>\nAdd the beef and fry till brown, stirring to coat with the onion, peppers and garlic<br \/>\nOnce beef has browned, add all the spices, the diced tomato, the 2 beef stock cubes and a cup of hot water<br \/>\nReduce the heat, pop the lid on the pan and cook for 1 hour<br \/>\nThen add the sweetcorn and carrots and cook for a further 15 minutes<br \/>\nAdd salt and pepper to taste before plating and serving hot with your favourite vegetables or a salad.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-17598\" src=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2021\/07\/Andile_Mazibuko-300x400.jpg\" alt=\"\" width=\"300\" height=\"400\" srcset=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2021\/07\/Andile_Mazibuko-300x400.jpg 300w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2021\/07\/Andile_Mazibuko-768x1024.jpg 768w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2021\/07\/Andile_Mazibuko-1152x1536.jpg 1152w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2021\/07\/Andile_Mazibuko-1536x2048.jpg 1536w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2021\/07\/Andile_Mazibuko-696x928.jpg 696w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2021\/07\/Andile_Mazibuko-1068x1424.jpg 1068w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2021\/07\/Andile_Mazibuko-315x420.jpg 315w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2021\/07\/Andile_Mazibuko-scaled.jpg 1920w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong>Sibongile Mazibuko\u2019s <\/strong><strong>Steamed Bread<\/strong><\/p>\n<p><u>Ingredients<\/u><\/p>\n<p>4 cups of flour<br \/>\n1 pack of yeast<br \/>\n2 tbsp of sugar<br \/>\n1 tsp salt<br \/>\n500ml lukewarm water<br \/>\n2 tbsp melted butter<br \/>\n\u00bc cup sweetcorn<\/p>\n<p><u>Method<\/u><\/p>\n<p>Add all the dry ingredients to a large bowl and mix well.<br \/>\nStir in the butter and then gradually add water and mix with your hands until a dough forms (the dough should not be sticky or dry).<br \/>\nPlace the dough in a clean steel bowl, cover with a cloth and put it in a warm area for 45 minutes to prove.<br \/>\nAfter 45 minutes the dough should have risen twice its initial size<br \/>\nPound it down and then add the sweetcorn and mix well.<br \/>\nForm a ball with the dough and place in a steel bowl pre-greased with butter or oil<br \/>\nPlace the bowl in a pot half-filled with boiling water, making sure the water does not rise above the bowl<br \/>\nSteam for 45 minutes before removing bread and serving hot with the beef stew<\/p>\n<p>The public is now the fifth judge in selecting our Top 10 finalists and can vote on the Miss South Africa website (<a href=\"https:\/\/www.misssa.co.za\">https:\/\/www.misssa.co.za<\/a>). The public can also vote using cash at a Money Market counter at any Shoprite, Checkers Hyper, Checkers, selected Usave and House &amp; Home stores or vote online at Computicket using a credit card. The cost is R5 for one vote with a selection of bundles available. Voting bundles include free votes and cannot be split between different contestants.
