As the year-end approaches, it\u2019s time for lazy summer days spent with family and friends. To celebrate this time appropriately, Laager Rooibos and its talented culinary ambassadors, Lebo and Tebo Ndala AKA @withlovefromthetwins have shared a delectable Rooibos-infused Christmas recipe \u2013 and some delightful stories of their festive memories.<\/span><\/p>\n

Tebo:\u00a0\u00a0\u00a0 Our favourite Christmas traditions include being at home with our family and cooking a delicious lunch while simply enjoying each other\u2019s company.<\/span><\/p>\n

What a typical Christmas day for you?<\/span><\/strong><\/p>\n

Tebo:\u00a0\u00a0\u00a0 We usually get dressed in our Sunday best and attend the morning church service. We then get back home where we finish off cooking Christmas lunch before the family arrives.<\/span><\/p>\n

What dish do you always make at Christmas time?<\/span><\/strong><\/p>\n

Tebo:\u00a0\u00a0\u00a0 That would definitely be a roast chicken because it\u2019s always a crowd favourite! Another firm favourite is the Choux Puffs with a Laager Rooibos Custard Filling (see recipe below).<\/span><\/p>\n

Choux Puffs with a Laager Rooibos Custard Filling by @withlovefromthetwins<\/span><\/strong><\/p>\n

Choux Pastry <\/span><\/u><\/p>\n

Ingredients:<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 cup water<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00bc cup butter<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 2 tsp castor sugar<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00bc tsp salt<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 2\/3 cup cake flour<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 1 egg<\/span><\/p>\n

\u00a0<\/span><\/p>\n

Method:<\/span><\/p>\n

1.\u00a0 \u00a0In a heavy base pan, bring the water, butter, salt and sugar to a simmer.<\/span><\/p>\n

2.\u00a0 \u00a0Once the butter is melted, remove from the heat and vigorously add in the flour.<\/span><\/p>\n

3.\u00a0 \u00a0Stir until a ball forms. Return to heat and cook for 1 to 3 minutes.<\/span><\/p>\n

4.\u00a0 \u00a0Transfer to a mixing bowl and allow to cool.<\/span><\/p>\n

5.\u00a0 \u00a0With a hand mixer, mix in the egg until nice and smooth.<\/span><\/p>\n

6.\u00a0 \u00a0Pipe dough onto a baking tray lined with baking paper.<\/span><\/p>\n

7.\u00a0 Bake for 30 to 40 minutes at 180\u00b0C until golden brown. During the last 5 to 10 minutes, prick each shell with a skewer and let them dry out in the oven while baking.<\/span><\/p>\n

8.\u00a0 Remove from oven, leave to cool completely.<\/span><\/p>\n

Laager Rooibos Cr\u00e8me Patisserie<\/span><\/u><\/p>\n

Ingredients:<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 4 egg yolks<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 60g castor sugar<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 25g plain flour<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 2 tsp cornflour<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 280ml milk<\/span><\/p>\n

\u2022\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 4 Laager Rooibos teabags<\/span><\/p>\n

\u00a0<\/span><\/p>\n

Method:<\/span><\/p>\n

1.\u00a0 Beat egg yolks and sugar for a few minutes until pale and lightly thickened.<\/span><\/p>\n

2.\u00a0 Whisk in the flours.<\/span><\/p>\n

3.\u00a0 Heat the milk in saucepan with the teabags, bring to the boil. Remove the teabags.<\/span><\/p>\n

4.\u00a0 Whisk the milk into the egg mix.<\/span><\/p>\n

5.\u00a0 Put the whole mixture back into the saucepan, stirring consistently until thick and boiling.<\/span><\/p>\n

6.\u00a0 Take the pan off the heat and cover with a plastic wrap to prevent skin from forming.<\/span><\/p>\n

7.\u00a0 Pipe into the choux puffs. Enjoy!<\/span><\/p>\n

\u00a0<\/span><\/p>\n

Tips and ideas<\/span><\/em><\/p>\n

\u00b7 Set up the choux puffs in the shape of a Christmas tree on a large platter or wooden board and top with a chocolate star, or set up in the shape of a star.<\/span><\/p>\n

\u00b7 Dust with icing sugar or pipe a thin layer of chocolate over the choux puffs.<\/span><\/p>\n

\u00b7 If you don\u2019t have a piping bag, use a normal plastic sandwich bag. Snip a small hole in 1 sealed corner, and fill with the cr\u00e8me. Voila \u2013 you have a home-made piping bag!<\/span><\/p>\n
