{"id":38009,"date":"2024-03-25T14:00:48","date_gmt":"2024-03-25T12:00:48","guid":{"rendered":"https:\/\/getitmagazine.co.za\/highway-berea\/?p=38009"},"modified":"2024-05-31T10:07:34","modified_gmt":"2024-05-31T08:07:34","slug":"enjoy-this-classic-easter-dish-with-a-twist","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/highway-berea\/blog\/2024\/03\/25\/enjoy-this-classic-easter-dish-with-a-twist\/","title":{"rendered":"Enjoy this classic Easter dish with a twist"},"content":{"rendered":"<h4><strong>Craig Cormack and Beau du Toit, The Salt Chef\u2019s, has a new twist on a traditional dish this Easter.<\/strong><\/h4>\n<p>Their Pomegranate Pickled Fish recipe, which serves 6, will have you begging for more.<\/p>\n<p><strong>Pomegranate pickled fish<\/strong><\/p>\n<p><strong>Local Cape Malay pickled fish, Hot Cross buns<\/strong><br \/>\n<em>Serves 6<\/em><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2 Lbs (1Kg) yellowtail, skinned<\/li>\n<li>200ml vegetable oil<\/li>\n<li>500g sliced onions<\/li>\n<li>15ml quality masala<\/li>\n<li>5ml fennel seeds<\/li>\n<li>5ml coriander seeds<\/li>\n<li>5ml black peppercorns<\/li>\n<li>4 whole cloves<\/li>\n<li>4-5 bay leaves<\/li>\n<li>125g dried apricots and sultanas<\/li>\n<li>500ml white or red wine (red wine gives fish a deeper colour)<\/li>\n<li>10ml coarse salt<\/li>\n<li>75ml white wine vinegar<\/li>\n<li>30ml brown sugar<\/li>\n<li>seeds of 1 large pomegranate<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Preheat oven at 200\u00b0C.\u00a0Place fish in baking dish, allowing space for sauce.\u00a0Cook onions for 30 minutes, until they become sweet.<\/p>\n<p>Stir in masala, fennel, coriander, peppercorns, cloves and bay leaves, and fry for 30 seconds before adding apricots, sultanas, wine and salt. Simmer, uncovered, for 20 minutes.<\/p>\n<p>Add vinegar and sugar and pour sauce over the fish.\u00a0Cover with foil and bake for 20 minutes.\u00a0Cool completely and refrigerate at least a day.<\/p>\n<p>Serve on salad with home-made lime mayo, and garnish by sprinkling the pomegranate seeds over the pickled fish.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Craig Cormack and Beau du Toit, The Salt Chef\u2019s, has a new twist on a traditional dish this Easter.
