Beans and other pulses are members of the legume family and can convert nitrogen from the air and \u2018fix\u2019 it into a form that can be readily used by plants.<\/p>\n<h3><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-3811\" src=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Rusks-Medium-400x267.jpg\" alt=\"\" width=\"400\" height=\"267\" srcset=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Rusks-Medium-400x267.jpg 400w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Rusks-Medium-768x512.jpg 768w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Rusks-Medium-1024x683.jpg 1024w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Rusks-Medium-696x464.jpg 696w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Rusks-Medium-1068x712.jpg 1068w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Rusks-Medium-630x420.jpg 630w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Rusks-Medium.jpg 1152w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/h3>\n<h3><strong>Rusks<\/strong><\/h3>\n<p>Rusks are always a winner, especially when dipped in tea or coffee.<\/p>\n<p><em>You will need:\u00a0<\/em><\/p>\n<p>7 cups self-raising flour<br \/>\n1\u00bd cups sugar<br \/>\n5 cups All Bran flakes<br \/>\n1 cup sunflower seeds<br \/>\n1 cup mixed seeds eg, linseeds, poppy seeds<br \/>\n\u00bd cup raisins<br \/>\n\u00bd cup coconut flakes<br \/>\n1 teaspoon baking powder<br \/>\n1 teaspoon salt<br \/>\n3 eggs, lightly whisked<br \/>\n2 cups buttermilk<br \/>\n2 cups butter, melted<\/p>\n<h3><em>Method<\/em><\/h3>\n<p>Preheat the oven to 180C and grease a large oven dish with butter.<br \/>\nMix all the dry ingredients together in a large mixing bowl.<br \/>\nMake a big hole in the centre and add the eggs, buttermilk and butter.<br \/>\nMix well using a wooden spoon or your hands until it forms a dough.<br \/>\nPlace the dough into the oven dish and press evenly.<br \/>\nBake for 30-40 minutes or until golden brown.<br \/>\nOnce ready, remove from the oven and immediately turn out on a working surface.<br \/>\nCut into finger shapes and place back onto the oven dish.<br \/>\nDry in a 100C oven overnight or for at least 8 hours, leaving the oven door slightly open for moisture to exit.<br \/>\nStore in an airtight container.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-3813\" src=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Samp-and-beans-Medium-400x268.jpg\" alt=\"\" width=\"400\" height=\"268\" srcset=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Samp-and-beans-Medium-400x268.jpg 400w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Samp-and-beans-Medium-768x514.jpg 768w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Samp-and-beans-Medium-1024x686.jpg 1024w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Samp-and-beans-Medium-696x466.jpg 696w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Samp-and-beans-Medium-1068x715.jpg 1068w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Samp-and-beans-Medium-627x420.jpg 627w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Samp-and-beans-Medium.jpg 1147w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<h3><strong>Samp and Beans<\/strong><\/h3>\n<p>Samp and Beans were traditionally eaten in South Africa by Zulu and Xhosa people. It was one of former President Nelson Mandela\u2019s favourite meals. Today it has become so popular that it\u2019s now pre-packed and mixed for easier preparation. It can be served as a starter, side dish or main meal. Some keep it simple and others love to mix in chillies or curry. You can add more flavour with meat and gravy. South Africans around the world love the meal for the memories it brings them of home.<\/p>\n<p><em>You will need<\/em><\/p>\n<p>1 kg samp and bean mix, rinsed and soaked overnight<br \/>\n2 onions, sliced<br \/>\n2 cloves garlic, crushed<br \/>\n5 ml allspice<br \/>\nOil<br \/>\n2 ml nutmeg<br \/>\nSalt and black pepper to taste<\/p>\n<p><em>Method<\/em><br \/>\nPour off the water after soaking and place the samp and bean mix in a large saucepan. Cover with water and simmer slowly until the samp and beans are nearly soft and most of the water has evaporated.<br \/>\nSeason well with salt.<br \/>\nIn the meantime, saut\u00e9 the onion and garlic in a little oil until soft and add the allspice.<br \/>\nAdd the onion mixture and continue to simmer until the samp mix is completely soft. Season with nutmeg and black pepper and extra salt to taste if necessary.<br \/>\nServe hot with meat and gravy if desired.<\/p>\n<h3><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-3812\" src=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Potjiekos-Medium-267x400.jpg\" alt=\"\" width=\"267\" height=\"400\" srcset=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Potjiekos-Medium-267x400.jpg 267w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Potjiekos-Medium-280x420.jpg 280w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2019\/09\/Potjiekos-Medium.jpg 512w\" sizes=\"auto, (max-width: 267px) 100vw, 267px\" \/><\/h3>\n<h3><strong>Potjiekos<\/strong><\/h3>\n<p>Potjiekos is an Afrikaans term for food cooked in layers in a traditional three-legged cast-iron pot, but in essence it is a stew, not much different to the slow-simmered stews of beef, chicken and mutton and that are popular across Southern African countries. The difference between a potjie and a stew is that a potjie is never stirred during the cooking process and is always cooked slowly over hot coals in a cast iron pan. There is nothing more traditional than serving a delicious potjie at your next social event.<\/p>\n<h3><strong>Curried Lamb and Bean Potjie<\/strong><\/h3>\n<p><em>You will need:<\/em><\/p>\n<p>1 cup red kidney beans<br \/>\n1 cup red speckled beans<br \/>\n1 kg lamb, sawn into portions<br \/>\n2 onions, chopped<br \/>\n2 cloves garlic, chopped<br \/>\n3 carrots, sliced<br \/>\n30 ml medium curry powder<br \/>\n5 ml turmeric<br \/>\n5 ml meat masala<br \/>\n1 x 410 g can whole tomatoes, chopped<br \/>\n1 bay leaf<br \/>\n2 teaspoons salt<br \/>\nFreshly ground black pepper to taste<br \/>\n500 ml meat stock<\/p>\n<p><em>Method<\/em><br \/>\nPlace beans in smaller potjie and cover with cold water.<br \/>\nSlowly bring to the boil then boil rapidly for 5 minutes.<br \/>\nRemove from heat but keep lid on and allow beans to soak for 1 hour, then drain.<br \/>\nHeat larger potjie well without adding oil or butter.<br \/>\nBrown meat a few pieces at a time.<br \/>\nAdd onion, garlic, carrots and celery and saut\u00e9 until onion is transparent.<br \/>\nAdd curry powder, turmeric and masala and fry for 2 minutes, stirring well.<br \/>\nArrange beans on top of meat followed by tomatoes, bay leaf, salt, pepper and heated stock.<br \/>\nEnsure the beans are well covered.<br \/>\nCover and simmer for 2 \u2013 3 hours or until beans and meat are tender.<br \/>\nStir carefully to mix.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>On 24 September South Africans celebrate Heritage Day.\u00a0 We&#8217;ve found three delicious homegrown recipes that not only embrace our rich heritage, but because they use ingredients such as seeds, flours, grains and beans, can help save our planet.
