{"id":7805,"date":"2020-04-13T10:25:19","date_gmt":"2020-04-13T08:25:19","guid":{"rendered":"https:\/\/getitmagazine.co.za\/highway-berea\/?p=7805"},"modified":"2024-05-31T10:13:02","modified_gmt":"2024-05-31T08:13:02","slug":"lockdown-meals-made-for-sharing-with-the-family","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/highway-berea\/blog\/2020\/04\/13\/lockdown-meals-made-for-sharing-with-the-family\/","title":{"rendered":"Lockdown meals made for sharing with the family"},"content":{"rendered":"<p>While you sit and plan your next family feast, perhaps consider these lekker, classically South African recipes with a twist, conjured up by celebrity Chef Lentswe Bhengu, featuring Bull Brand Corned Meat.<\/p>\n<p>These recipes are quick and easy to prepare, so less time is needed attending to the pots and more time left to create some wholesome memories with the family.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-7810\" src=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/BullBrandXChefLentswe-1-400x268.jpg\" alt=\"\" width=\"400\" height=\"268\" srcset=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/BullBrandXChefLentswe-1-400x268.jpg 400w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/BullBrandXChefLentswe-1-768x515.jpg 768w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/BullBrandXChefLentswe-1-1024x686.jpg 1024w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/BullBrandXChefLentswe-1-696x466.jpg 696w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/BullBrandXChefLentswe-1-1068x716.jpg 1068w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/BullBrandXChefLentswe-1-627x420.jpg 627w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/BullBrandXChefLentswe-1.jpg 1612w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<p><strong>Mammas Vetkoek stuffed with Chakalaka Corned Meat<\/strong><br \/>\n<em>Nothing says comfort food better than a warm vetkoek and with the addition of Chakalaka Corned Meat, you\u2019re in for a real treat.<\/em><\/p>\n<p><strong>INGREDIENTS<\/strong> (Serves 6)<br \/>\nChakalaka Corned MeatFilling:<br \/>\n\u2022 3Tbs Vegetable Oil<br \/>\n\u2022 1 medium onion, chopped<br \/>\n\u2022 3 cloves garlic, crushed<br \/>\n\u2022 \u00bd Tsp Cayenne Pepper<br \/>\n\u2022 2 cans Bull Brand Chakalaka Corned Meat<br \/>\n\u2022 2Tbs Barbeque Spice<br \/>\n\u2022 2 cups chopped vegetables (use whatever you have in the fridge &#8212; celery, beans, sweet potato, carrot) OR 2 cups drained Rhodes Quality Mixed Vegetable<br \/>\n\u2022 Salt &amp; Pepper to taste Vetkoek:<br \/>\n\u2022 1 kg flour, plus extra for dusting<br \/>\n\u2022 120g sugar<br \/>\n\u2022 1 10g Sachet Instant Yeast<br \/>\n\u2022 2Tbs Oil<br \/>\n\u2022 1Tbs Salt<br \/>\n\u2022 1l warm water, keep 1 cup extra (if dough is too stiff)<br \/>\n\u2022 Vegetable oil, for deep frying<\/p>\n<p><strong>METHOD<\/strong><br \/>\nChakalaka Corned Meat filling:<br \/>\n\u2022 Heat the oil, in a large frying pan over medium-high heat.<br \/>\n\u2022 Season with salt and pepper.<br \/>\n\u2022 Add the onion, cayenne pepper and garlic and saut\u00e9 until the onion softens<br \/>\n\u2022 Add the corned meat, breaking it up with a spoon.<br \/>\n\u2022 Cook for 5 minutes until browned<br \/>\n\u2022 Stir in the barbeque spice and cook for one minute.<br \/>\n\u2022 Add chopped vegetables and peas, stirring until cooked through.<br \/>\n\u2022 Check seasoning.<\/p>\n<p>Vetkoek:<br \/>\n\u2022 Mix the flour, sugar, yeast, oil, salt and warm water.<br \/>\n\u2022 Add extra water only if necessary. Knead thoroughly, then allow to prove for 30 minutes until double in original size (this will take longer on a cold day).<br \/>\n\u2022 Dust a tray with flour.<br \/>\n\u2022 Scoop up handfuls of dough and roll into balls. Place the vetkoek on the tray and allow to rise until doubled in size.<br \/>\n\u2022 Heat the oil in a deep saucepan.<br \/>\n\u2022 Deep fry a few vetkoek at a time (do not a lot of balls at the same time)<br \/>\n\u2022 Keep turning the balls after every 2 minutes.<br \/>\n\u2022 Check the vetkoek after 10 minutes \u2013 they should have risen to the top of the oil. Drain on kitchen paper until ready to serve.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-7807\" src=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/Bull-Brand_MamasVetkoek-400x267.jpg\" alt=\"\" width=\"400\" height=\"267\" srcset=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/Bull-Brand_MamasVetkoek-400x267.jpg 400w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/Bull-Brand_MamasVetkoek-768x512.jpg 768w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/Bull-Brand_MamasVetkoek-1024x683.jpg 1024w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/Bull-Brand_MamasVetkoek-696x464.jpg 696w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/Bull-Brand_MamasVetkoek-1068x712.jpg 1068w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/Bull-Brand_MamasVetkoek-630x420.jpg 630w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/04\/Bull-Brand_MamasVetkoek.jpg 1620w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<p><strong>Gogo\u2019s Cottage Pie<\/strong><br \/>\n<em>A popular dish, with a Gogo twist, that will serve spoonfuls of happiness for the whole family.<\/em><\/p>\n<p><strong>INGREDIENTS<\/strong> (Servs 4-6)<br \/>\n\u2022 2 cans Bull Brand Corned Meat<br \/>\n\u2022 1 pkt Potatoes, cleaned with skins on (for mash)<br \/>\n\u2022 2 Onions, chopped<br \/>\n\u2022 2 Cloves Garlic, chopped<br \/>\n\u2022 1 Red Pepper, chopped<br \/>\n\u2022 2 Tbs Tomato Paste<br \/>\n\u2022 15ml Worcestershire Sauce<br \/>\n\u2022 1Tbs Mixed Herbs<br \/>\n\u2022 1 cup Frozen Mixed Veggies<br \/>\n\u2022 3 Carrots, grated<br \/>\n\u2022 1tsp Baking Powder (optional)<br \/>\n\u2022 100ml milk<br \/>\n\u2022 Salt &amp; White Pepper to taste<\/p>\n<p><strong>METHOD<\/strong><br \/>\n\u2022 In a large frying pan over medium to high heat, saut\u00e9 onions, garlic and pepper till soft.<br \/>\n\u2022 Season with salt &amp; pepper.<br \/>\n\u2022 Add the corned meat and fry off until well combined, adding salt, pepper, mixed herbs, tomato paste, tomato sauce, Worcestershire sauce, mixing in well.<br \/>\n\u2022 Reduce the heat to medium.<br \/>\n\u2022 Add the carrots and simmer till soft.<br \/>\n\u2022 Turn off the heat, add the mixed veggies, stir and close the lid.
