Always happy to share her recipes, Chef Kerry recommends her hearty lamb neck stuffed with ricotta and herbs.<\/p>\n<p>\u201cRich, smooth and heartwarming \u2013 nothing beats Steenberg Merlot with this winning winter recipe,\u201d adds Basson.<\/p>\n<p>Steenberg Merlot 2017 is available at a cellar door price of R190 and can be purchased online now at <a href=\"http:\/\/www.steenbergfarm.com\">www.steenbergfarm.com<\/a> for delivery after the lockdown restrictions allow it.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Lamb Neck stuffed with Ricotta and Herb with Lemon Jus <\/strong><\/p>\n<p><strong>by Steenberg Chef Kerry Kilpin<\/strong><strong>\u00a0<\/strong><\/p>\n<p>Serves 6<\/p>\n<p>1kg deboned lamb neck<\/p>\n<p>200g ricotta<\/p>\n<p>10g chopped basil<\/p>\n<p>10g chopped parsley<\/p>\n<p>Zest of 1 lemon<\/p>\n<p>1 onion chopped<\/p>\n<p>1 carrot chopped<\/p>\n<p>1 stick celery chopped<\/p>\n<p>1000ml stock<\/p>\n<p>1 lemon juiced and zested<\/p>\n<p>100g butter<\/p>\n<p>Salt and pepper<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>In a food processor combine the ricotta, herbs and lemon juice, season with salt and pepper.<\/li>\n<li>Open the neck up and season with salt and pepper on the inside and out. Lay the neck \u201cskin\u201d side down and spread the filling over the entire surface of the meat. Roll up like a Swiss roll and secure the meat by rolling with butcher\u2019s string.<\/li>\n<li>Prepare a roasting tin with the chopped vegetables and stock. Lay the lamb neck on top of the vegetables.<\/li>\n<li>Braise in a preheated oven of 160 degrees Celsius for 2-3 hours or until cooked. When you place a skewer in the meat it will have no resistance.<\/li>\n<li>Once cooked remove the meat from the pan and allow to rest.<\/li>\n<li>Combine the vegetables and stock from the roasting pan and blend. Pour into a pot and bring to the boil.\u00a0 Add the zest, lemon juice and butter. Season with salt and pepper.
