It\u2019s filling, easy to make, and best served with fresh crusty bread to mop up even the last drop in your bowl.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-8288\" src=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/05\/Goulash-Soup-with-Constantia-Glen-FIVE-LR-267x400.jpg\" alt=\"\" width=\"267\" height=\"400\" srcset=\"https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/05\/Goulash-Soup-with-Constantia-Glen-FIVE-LR-267x400.jpg 267w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/05\/Goulash-Soup-with-Constantia-Glen-FIVE-LR-280x420.jpg 280w, https:\/\/getitmagazine.co.za\/highway-berea\/wp-content\/uploads\/sites\/23\/2020\/05\/Goulash-Soup-with-Constantia-Glen-FIVE-LR.jpg 591w\" sizes=\"auto, (max-width: 267px) 100vw, 267px\" \/><\/p>\n<p><strong>Traditional Austrian Beef Goulash soup recipe<\/strong><\/p>\n<p><strong>Serves 4<\/strong><\/p>\n<p><strong><em>\u00a0<\/em><\/strong><\/p>\n<p><strong>Ingredients: <\/strong><\/p>\n<p>45ml (3 tbsp) olive oil<\/p>\n<p>3 (600g) medium onions, chopped<\/p>\n<p>5ml (1 tsp) garlic, finely chopped<\/p>\n<p>15ml (1 tbsp) tomato paste<\/p>\n<p>15ml (1 tbsp) paprika<\/p>\n<p>2,5ml (\u00bd tsp) ground cumin<\/p>\n<p>2,5ml (\u00bd tsp) marjoram<\/p>\n<p>2,5ml (\u00bd tsp) thyme<\/p>\n<p>2,5ml (\u00bd tsp) cayenne pepper (optional)<\/p>\n<p>250g boneless, cubed beef<\/p>\n<p>60ml (\u00bc cup) red wine<\/p>\n<p>1L (4 cups) warm beef stock<\/p>\n<p>3 (660g) medium potatoes, peeled and diced<\/p>\n<p>salt and pepper<\/p>\n<p>&nbsp;<\/p>\n<p><strong>To serve:<\/strong><\/p>\n<p>sour cream<\/p>\n<p>chopped chives<\/p>\n<p>crusty bread<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Heat the oil in a large, heavy based pot over medium heat. Add the onions and garlic and saut\u00e9 until tender for 8-10 minutes.<\/li>\n<li>Stir in the tomato paste, paprika, cumin, marjoram, thyme and cayenne pepper. Add the beef and fry, 5 minutes.<\/li>\n<li>Stir in the red wine and simmer, 5 minutes. Add the stock, cover and cook, 40 minutes.<\/li>\n<li>Add the potatoes and simmer for a further 30 minutes until the potatoes and meat are fork-tender.<\/li>\n<li>Season the soup to taste, ladle into bowls and top each portion with a dollop of sour cream.
