David admits that he loves using Seabass when whipping up French-inspired cusine and admits that the fish has the opportunity to deliver some exquisite flavours. This recipe can also be found in his cookbook \u2018Mile 8: A Book About Cooking.\u2019<\/p>\n<p><strong>Preparation Time:<\/strong> 30 minutes<\/p>\n<p><strong>Cooking Time<\/strong>: 45 minutes<\/p>\n<p><strong>Serves:<\/strong> 8<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients: <\/strong><\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Seabass<\/strong><\/p>\n<p>640g seabass \u2013 filleted, skin on<\/p>\n<p>salt and pepper<\/p>\n<p>lemon zest \u2013 for sprinkling<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Lentil curry<\/strong><\/p>\n<p>1 onion \u2013 finely chopped<\/p>\n<p>1 carrot \u2013 finely grated<\/p>\n<p>2 cloves garlic \u2013 grated on a microplane<\/p>\n<p>5g ground cumin<\/p>\n<p>3g mustard seeds<\/p>\n<p>2 tomatoes \u2013 skin removed and finely chopped<\/p>\n<p>8g wet seafood masala<\/p>\n<p>5g brown sugar<\/p>\n<p>350g brown lentils \u2013 cleaned<\/p>\n<p>200ml tomato juice<\/p>\n<p>250ml vegetable stock<\/p>\n<p>salt and pepper \u2013 to season<\/p>\n<p>lemon \u2013 for squeezing<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Pickled cucumber<\/strong><\/p>\n<p>200ml rice wine vinegar pickle<\/p>\n<p>2 cucumbers \u2013 peeled and seeded<\/p>\n<p>32 sprigs micro coriander \u2013 4 per serving<\/p>\n<p>72 small fennel blossoms \u2013 9 per serving<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Method:<\/strong><\/p>\n<ul>\n<li>Cut the filleted seabass into 80g portions; do not remove the skin. Grill the fish skin side down first and turn when the flesh begins to change from translucent to white. Season with salt and pepper and finish with lemon zest.<\/li>\n<\/ul>\n<ul>\n<li>Fry the onions, carrot and garlic until translucent. Add the spices and continue to cook for a few minutes. Add the finely chopped tomatoes, seafood masala, brown sugar, lentils, tomato juice and vegetable stock. Cover with a cartouche (paper or silicone lid). Simmer slowly for 1 hour until the curry sauce thickens slightly, but be careful not to overcook the lentils \u2013 they should be soft but remain whole. Adjust seasoning if necessary and finish with a squeeze of lemon. Allow to cool, and then refrigerate for a day before serving \u2013 curries develop flavour as they stand. Warm the curry gently in a pot as needed.<\/li>\n<\/ul>\n<ul>\n<li>Pour the cold pickling liquid into a vacuum bag. Add the cucumber and vacuum seal. Refrigerate and leave for 24\u201336 hours. Remove the cucumber from the vacuum bag and slice into ribbons on a mandolin or use a peeler.<\/li>\n<\/ul>\n<ul>\n<li>To assemble, arrange each plate as you wish, or by following the photo. Spoon 45g warm lentil curry onto each plate. Place the seabass on top of the lentils. Butter<\/p>\n<p>1 tblsp. Crushed Garlic<\/p>\n<p>1 tsp. Dried Mixed Herbs<\/p>\n<p>1 Carrot, grated<\/p>\n<p>1 Onion, finely chopped<\/p>\n<p>2 sprigs Thyme<\/p>\n<p>250g Prawns, shelled &amp; deveined<\/p>\n<p>30ml Tomato Paste<\/p>\n<p>500ml Water<\/p>\n<p>500ml Cream<\/p>\n<p>Salt<\/p>\n<p>Crushed Black Pepper<\/p>\n<p>&nbsp;<\/p>\n<p><strong><u>Garnish: <\/u><\/strong><\/p>\n<p>2 tblsp. Butter<\/p>\n<p>1 tsp. Lemon Pepper<\/p>\n<p>2 tsp.
