Together with mashed anchovy, the herbs were blended into a creamy dressing of mayonnaise and sour cream. A dash of lemon juice and vinegar was added to cut through the richness.<\/p>\n<p>Over time chefs and home cooks have created their own versions. You can too, as long as the basics remain: fresh green herbs, a creamy base and a squeeze of lemon or dash of vinegar.<\/p>\n<p>It makes a delicious dressing for salads, as a dip or drizzle over roasted or steamed veggies.<\/p>\n<p><strong>Surprising fact:<\/strong> Seems there is no agreement on who the chef was. Browse the internet and different blogs claim with great authority that the chef was either Victor Hirtzler, or Philip Roemer or Phillip S Kauffman. No matter, it\u2019s the flavour that counts.<\/p>\n<h4><strong>Classic green goddess herbs<\/strong><\/h4>\n<p><strong>Tarragon <\/strong>supplies the classic\u00a0 liquorice-like flavour and only small amounts of the chopped fresh herb are necessary.<\/p>\n<p>There are two tarragon varieties to grow from seed, as well as chervil which has a \u00a0lighter anise\/liquorice flavour.<\/p>\n<figure id=\"attachment_21292\" aria-describedby=\"caption-attachment-21292\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-21292 size-medium\" src=\"https:\/\/getitmagazine.co.za\/wp-content\/uploads\/2026\/02\/Alice-Coetzee-20-02-2026-gardening-herbs-photo-2-300x400.jpg\" alt=\"\" width=\"300\" height=\"400\" \/><figcaption id=\"caption-attachment-21292\" class=\"wp-caption-text\">Russian tarragon.<\/figcaption><\/figure>\n<p>Russian Tarragon prefers poor\u00a0soils\u00a0and happily tolerates drought and neglect. Grow in a warm sunny position. A good herb for containers.<\/p>\n<figure id=\"attachment_21293\" aria-describedby=\"caption-attachment-21293\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-21293 size-medium\" src=\"https:\/\/getitmagazine.co.za\/wp-content\/uploads\/2026\/02\/Alice-Coetzee-20-02-2026-gardening-herbs-photo-3-400x265.jpg\" alt=\"\" width=\"400\" height=\"265\" \/><figcaption id=\"caption-attachment-21293\" class=\"wp-caption-text\">Mexican tarragon.<\/figcaption><\/figure>\n<p>Mexican tarragon, also known as Marigold Mexican Mint, needs very little care and produces tasty leaves throughout summer.<\/p>\n<figure id=\"attachment_21294\" aria-describedby=\"caption-attachment-21294\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-21294 size-medium\" src=\"https:\/\/getitmagazine.co.za\/wp-content\/uploads\/2026\/02\/Alice-Coetzee-20-02-2026-gardening-herbs-photo-4-400x289.jpg\" alt=\"\" width=\"400\" height=\"289\" \/><figcaption id=\"caption-attachment-21294\" class=\"wp-caption-text\">Chervil.<\/figcaption><\/figure>\n<p>Chervil tastes like a cross between tarragon and parsley. It has delicate, curly leaves resembling carrot tops. Sow where it is to grow because its tap root system doesn\u2019t take kindly to transplanting.<\/p>\n<figure id=\"attachment_21295\" aria-describedby=\"caption-attachment-21295\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-21295 size-medium\" src=\"https:\/\/getitmagazine.co.za\/wp-content\/uploads\/2026\/02\/Alice-Coetzee-20-02-2026-gardening-herbs-photo-5-400x267.jpg\" alt=\"\" width=\"400\" height=\"267\" \/><figcaption id=\"caption-attachment-21295\" class=\"wp-caption-text\">Chives.<\/figcaption><\/figure>\n<p><strong>Chives<\/strong> add a mild flavour of onion. Chives may take up to three weeks to germinate, so be patient. Harvest the leaves by snipping them off at the base. New shoots emerge quickly. Feed with liquid fertiliser at half strength once a month and they last well for two to three years.<\/p>\n<figure id=\"attachment_21296\" aria-describedby=\"caption-attachment-21296\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-21296 size-medium\" src=\"https:\/\/getitmagazine.co.za\/wp-content\/uploads\/2026\/02\/Alice-Coetzee-20-02-2026-gardening-herbs-photo-6-400x300.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><figcaption id=\"caption-attachment-21296\" class=\"wp-caption-text\">Parsley.<\/figcaption><\/figure>\n<p><strong>Parsley<\/strong> can either be the traditional moss curled parsley or the more flavourful Italian parsley. Parsley can be difficult to start from seed, and it can take several weeks for seed to germinate, but once established, seedlings are easy, quick growers that can take sun and partial shade. Regular harvesting will encourage plants to produce new leaves.<\/p>\n<p><strong>Variations<\/strong><\/p>\n<figure id=\"attachment_21297\" aria-describedby=\"caption-attachment-21297\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-21297 size-medium\" src=\"https:\/\/getitmagazine.co.za\/wp-content\/uploads\/2026\/02\/Alice-Coetzee-20-02-2026-gardening-herbs-photo-7-400x268.jpg\" alt=\"\" width=\"400\" height=\"268\" \/><figcaption id=\"caption-attachment-21297\" class=\"wp-caption-text\">Sweet Basil.<\/figcaption><\/figure>\n<p>Basil (sweet clove), Rocket (peppery), coriander (aromatic citrus) and can all be sown directly into the soil or into\u00a0 large seed trays.<\/p>\n<figure id=\"attachment_21298\" aria-describedby=\"caption-attachment-21298\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-21298 size-medium\" src=\"https:\/\/getitmagazine.co.za\/wp-content\/uploads\/2026\/02\/Alice-Coetzee-20-02-2026-gardening-herbs-photo-8-400x300.jpg\" alt=\"\" width=\"400\" height=\"300\" \/><figcaption id=\"caption-attachment-21298\" class=\"wp-caption-text\">Baby rocket leaves.<\/figcaption><\/figure>\n<p>By sowing thickly, the early growth can be thinned out and used as their leaves have an intense flavour. The plants left behind can mature or be treated as cut-and-come again herb salad leaves.
