It\u2019s designed for real life: simple to prepare, hard to mess up, and packed with flavour.<\/p>\n<p>It\u2019s especially perfect for the person who doesn&#8217;t usually cook (and may be feeling nervous about getting it right). With this dish, you can confidently serve up something delicious \u2014 no stress, no culinary drama.<\/p>\n<p>The Italian-inspired name alone sets the mood, while mushrooms bring deep umami flavour, wholesome goodness and a touch of everyday luxury.<\/p>\n<p><strong>Umami Mushroom Rigatoni <\/strong><\/p>\n<p>Serves: 4<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>250g rigatoni pasta (or another similar short pasta)<\/li>\n<li>4 large portabello mushrooms<\/li>\n<li>250g portabellini mushrooms<\/li>\n<li>2 Tbsp olive oil<\/li>\n<li>2 Tbsp butter<\/li>\n<li>1 large bunch fresh thyme<\/li>\n<li>4 garlic cloves, minced<\/li>\n<li>2 Tbsp soy sauce<\/li>\n<li>\u00bd cup cr\u00e8me fra\u00eeche<\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>1 lemon, cut into wedges<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Cook rigatoni in boiling salted water, until al dente.<\/p>\n<p>Reserve 1 cup of pasta cooking water and drain pasta.<\/p>\n<p>While the pasta is cooking, scrape out the black gills from the underside of the portabellos with a teaspoon.
