pepper<\/li>\n<li>Chives for garnish<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 200\u00b0C.<\/li>\n<li>In a bowl, toss the butternut, onion, and garlic with olive oil, salt, and pepper to obtain the best flavour.<\/li>\n<li>Add to a roasting pan, and cook for 25\u201330 minutes until the vegetables are soft and caramelised.<\/li>\n<li>Transfer the contents from the roasting pan to a pot and add vegetable stock and ginger.<\/li>\n<li>Simmer on medium to low heat for 10 minutes.<\/li>\n<li>Remove from the stove top and add to a blender and blend until smooth.<\/li>\n<li>Stir in coconut cream and then taste.<\/li>\n<li>Adjust the seasoning by adding any additional pepper<\/li>\n<li>Pour into bowl and serve with chives (chopped or sprigs)<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-22317\" src=\"https:\/\/getitmagazine.co.za\/wp-content\/uploads\/2026\/05\/Lamb-Shank-400x228.jpg\" alt=\"\" width=\"400\" height=\"228\" \/><\/p>\n<p><strong>Main Course: Lamb Shank with Mash and Vegetables (serves 4)<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>Lamb Shank<\/p>\n<ul>\n<li>4 lamb shanks<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>Salt and black pepper<\/li>\n<li>1 onion, chopped.<\/li>\n<li>2 carrots, chopped<\/li>\n<li>2 celery stalks, chopped<\/li>\n<li>4 cloves garlic, crushed<\/li>\n<li>2 tbsp tomato paste<\/li>\n<li>250 ml red wine<\/li>\n<li>500 ml beef or lamb stock<\/li>\n<li>2 sprigs fresh rosemary<\/li>\n<li>2 sprigs thyme<\/li>\n<li>2 bay leaves<\/li>\n<\/ul>\n<p>Creamy Mashed Potatoes<\/p>\n<ul>\n<li>1 kg potatoes peeled and chopped.<\/li>\n<li>80 g butter<\/li>\n<li>120 ml cream or milk<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p>Vegetables<\/p>\n<ul>\n<li>200 g baby carrots<\/li>\n<li>150 g green beans or asparagus<\/li>\n<li>1 tbsp butter<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Prepare the Lamb<\/p>\n<ol>\n<li>Season the lamb shanks with salt and pepper.<\/li>\n<li>Heat olive oil in a large pot or casserole dish.<\/li>\n<li>Brown the lamb shanks on all sides until golden.<\/li>\n<li>Remove and set aside to rest.<\/li>\n<\/ol>\n<p>Make the Braising Base<\/p>\n<ol>\n<li>In the same pot you cooked the shanks in, saut\u00e9 onion, carrots, celery, and garlic for about 5 minutes.<\/li>\n<li>Stir in tomato paste and cook for 2 minutes.<\/li>\n<li>Pour in red wine and simmer until reduced by half.<\/li>\n<\/ol>\n<p>Slow Cook<\/p>\n<ol>\n<li>Add stock, rosemary, thyme, and bay leaves.<\/li>\n<li>Return the lamb shanks to the pot.<\/li>\n<li>Cover and cook:<\/li>\n<\/ol>\n<ul>\n<li>Oven: 160\u00b0C for 2.5\u20133 hours<\/li>\n<li>Stove: Simmer gently for 2 hours<\/li>\n<\/ul>\n<p>The meat should be very tender and falling off the bone.<\/p>\n<p>Making the Mash<\/p>\n<ol>\n<li>Boil potatoes in salted water for 15\u201320 minutes until soft.<\/li>\n<li>Drain the water from the pot, and mash the potatoes, adding butter and cream gradually until you have the right consistency.<\/li>\n<li>Season with salt and pepper.<\/li>\n<\/ol>\n<p>Preparing the Vegetables<\/p>\n<ol>\n<li>Blanch the carrots and green beans in boiling salted water for 3\u20134 minutes.<\/li>\n<li>Toss in butter and season with salt and pepper.<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-22318\" src=\"https:\/\/getitmagazine.co.za\/wp-content\/uploads\/2026\/05\/Vanilla-Pannacotta-400x265.jpg\" alt=\"\" width=\"400\" height=\"265\" \/><\/p>\n<p><strong>Dessert: Vanilla Panna Cotta with Berry Compote<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>500 ml cream<\/li>\n<li>80 g sugar<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>2 tsp gelatine<\/li>\n<li>3 tbsp water<\/li>\n<\/ul>\n<p>Berry Compote<\/p>\n<ul>\n<li>200 g mixed berries<\/li>\n<li>2 tbsp sugar<\/li>\n<li>1 tbsp lemon juice<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Bloom gelatine in cold water for 5 minutes.<\/li>\n<li>Heat the cream, sugar, and vanilla in a pot until just simmering (be careful not to burn the mixture).<\/li>\n<li>Stir in gelatine and stir until completely dissolved.<\/li>\n<li>Pour the mixture into moulds and chill for 4 hours.<\/li>\n<\/ol>\n<p>For the compote:<\/p>\n<ol>\n<li>Simmer the berries, sugar, and lemon juice in a pan for 5 minutes.<\/li>\n<li>Allow to cool and spoon over panna cotta before serving.<\/li>\n<\/ol>\n<p>A meal like this will really show your love, reflecting a way of saying what words sometimes cannot.
