Since the largest concentration of vitamin C is found just under the skin, the guavas\u00a0for this delicious pavlova recipe\u00a0are poached unpeeled in\u00a0Roodeberg Ros\u00e9,\u00a0along with the pips,\u00a0which are high in fibre\u00a0and are a good source of iron.<u><\/u><u><\/u><\/p>\n<p><strong>Pavlova<\/strong><u><\/u><u><\/u><\/p>\n<p><strong>You\u2019ll need:<\/strong><\/p>\n<ul>\n<li>6 large egg whites, at room temperature;<\/li>\n<li>1 1\/2 cups cups caster sugar;<\/li>\n<li>2 tablespoons lemon juice;<\/li>\n<li>1 tablespoon cornflour;<\/li>\n<li>300ml fresh cream<u><\/u><u><\/u><\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ul>\n<li>Preheat the oven to 120\u00b0C.<\/li>\n<li>Line a baking tray with baking paper and draw a 20cm disc onto the paper. Turn the paper over so that the drawn disc is underneath.<\/li>\n<li>Use an electric mixer to whisk the egg whites in a clean, dry bowl until soft peaks form. Ensure the bowl is clean, as any fat or spot of egg yolk can prevent egg whites from fluffing up.<\/li>\n<li>Gradually add the sugar, 1 tablespoon at a time, beating well after each addition, until the meringue is thick and glossy and the sugar is completely dissolved.<\/li>\n<li>Add the lemon juice and cornflour and gently fold to combine.<\/li>\n<li>Spoon the meringue onto the tray. Use a spatula to shape into a disc, using the circle as a guide.<\/li>\n<li>Bake for 90 minutes.<\/li>\n<li>Turn off the oven, leave the door closed and allow it to cool completely. This stops the pavlova from cracking.<\/li>\n<li>Use an electric mixer to beat the cream until it forms soft peaks.<\/li>\n<li>Fill the pavlova with the cream and top it off with the poached guavas and guava sauce.<u><\/u><u><\/u><\/li>\n<\/ul>\n<p><strong>For the cardamom poached guava <\/strong><\/p>\n<p><strong>You\u2019ll need:<\/strong><\/p>\n<ul>\n<li>4 guavas, halved;<\/li>\n<li>1 cup each Roodeberg Ros\u00e9 wine, water, and sugar;<\/li>\n<li>4 cardamom pods;<\/li>\n<li>A pinch of vanilla seeds<u><\/u><u><\/u><\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ul>\n<li>Simmer the wine, sugar, cardamom pods and vanilla in a pot for 10 minutes.<\/li>\n<li>Add the halved guavas and slowly simmer for a further 10 -15 minutes.<\/li>\n<li>Spoon them out of the syrup and allow to cool.<u><\/u><u><\/u><\/li>\n<\/ul>\n<p><strong>For the guava sauce<\/strong><\/p>\n<p><strong>You\u2019ll need: <\/strong><\/p>\n<ul>\n<li>3 guavas, peeled and seeded;<\/li>\n<li>\u00bd cup each water and Roodeberg Ros\u00e9;<\/li>\n<li>\u00bc cup sugar;<\/li>\n<li>1 tablespoon lemon juice<u><\/u><u><\/u><\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Bring all the ingredients to a boil and simmer for 20 minutes until the guavas are soft.<\/li>\n<li>Take the pot off the heat and allow it to cool.<\/li>\n<li>Blend them all together and drizzle over the pavlova.<u><\/u><u><\/u><\/li>\n<\/ul>\n<p>Served with a glass of Roodeberg\u00a0Classic Ros\u00e9 2019 &#8211; a blend of Cabernet Sauvignon,\u00a0Shiraz and Mourvedre, this\u00a0vivacious and enchanting ros\u00e9 is fresh and crisp, with good acidity and a\u00a0long, fruity\u00a0finish to\u00a0complement\u00a0the\u00a0tropical flavours of\u00a0nutritious guavas.\u00a0You\u2019ll find it for around R79.99 from your local wine store.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Celebrate\u00a0your\u00a0Mom this Mother&#8217;s Day by whipping up this delicious, immune boosting Roodeberg Ros\u00e9-inspired\u00a0guava pavlova by local foodie Elmarie Berry.
