They\u2019re also incredibly versatile, easily switching from sweet to savoury dishes and look oh-so-good on any summer spread, whether sliced, diced or all dressed up.<\/p>\n<p>This season, we\u2019re maximising mangoes\u2019 sultry sweetness and pairing them with butterbeans to create a Butterbean Hummus and Mango Swirl Dip Platter which is ideal for fuss-free entertaining on New Year\u2019s Eve. This delectable twist on a classic dip will have your guests shouting &#8220;Mmmmm&#8230; mangoes!&#8221; instead of \u201cHappy New Year!\u201d.<\/p>\n<p>This yummy mango dip will not only satisfy the taste buds but also add a festive flair to your party spread. It\u2019s an easy, healthy choice that encourages everyone to snack mindfully while celebrating the New Year.<\/p>\n<p>Mangoes are high in vitamins A and C, biotin and the mineral potassium. They are also a source of vitamins B1 and B6 and free from fat, sodium and cholesterol. As if we needed any more reasons to indulge in these tropical treats!<\/p>\n<p>For more Mmmmm\u2026mango recipes visit <a href=\"http:\/\/www.mango.co.za\">www.mango.co.za<\/a>,\u00a0 like us on Facebook<\/p>\n<p><a href=\"https:\/\/www.facebook.com\/SAMangoes\">SAMangoes<\/a> and follow us on Instagram <a href=\"https:\/\/www.instagram.com\/mangoessa\">MangoesSA<\/a><\/p>\n<p><strong>Butterbean Hummus<\/strong> <strong>and Mango Swirl Dip Platter<\/strong><\/p>\n<p>Serves 6-8 as a snack<\/p>\n<p><strong>Preparation time:<\/strong> 30 minutes<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>FOR THE BUTTERBEAN HUMMUS <\/strong><\/p>\n<ul>\n<li>2 x 400 g tins butterbeans, drained<\/li>\n<li>2 garlic cloves, crushed<\/li>\n<li>60 ml (\u00bc cup) lemon juice<\/li>\n<li>125 ml (\u00bd cup) olive oil<\/li>\n<li>10 ml (2 tsp) ground cumin<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p><strong>FOR THE MANGO SWIRL<\/strong><\/p>\n<ul>\n<li>\u00bd mango, peeled and diced<\/li>\n<li>30 ml (2 tbsp) lemon juice<\/li>\n<li>15 ml (1 tbsp) olive oil<\/li>\n<\/ul>\n<p><strong>FOR THE TOPPING<\/strong><\/p>\n<ul>\n<li>\u00bd mango, peeled and cut into small cubes<\/li>\n<li>\u00bd small red onion, thinly sliced<\/li>\n<li>Small handful coriander, chopped<\/li>\n<li>Zest and juice of 1\u00a0lime<\/li>\n<li>1 jalapeno, thinly sliced<\/li>\n<li>30 ml (2 tbsp) feta, crumbled<\/li>\n<li>Paprika or cayenne pepper for dusting<\/li>\n<li>Crackers and crudit\u00e9s to serve<\/li>\n<\/ul>\n<p><strong>Method: <\/strong><\/p>\n<ol>\n<li>For the hummus, blend all the ingredients together using a stick blender until smooth. Season with salt and pepper. Spread out onto a platter.<\/li>\n<li>For the mango swirl, blend all the ingredients together using a stick blender until smooth. Season with salt and pepper. Swirl through the hummus.<\/li>\n<li>For the topping, combine the mango, onion, coriander, lime and jalapeno. Season with salt and pepper. Scatter over the dip with the feta. Dust with paprika or cayenne.
