Instead, I found myself devouring and relishing pasta with different types of sauces, cottage pies and even souffl\u00e9s. Meals that I had always thought were meant only for special occasions were now being dished up almost every day by my sisters,\u2019 explains Ngwenya.<\/p>\n<p>\u2018I also realised then that if meals are that good and tasty, they bring the whole family together, and that\u2019s been my inspiration ever since.\u2019<\/p>\n<h4><strong>An interrupted journey<\/strong><\/h4>\n<p>After leaving school, Ngwenya, who hails from Brakpan, enrolled at Capsicum Culinary Studio\u2019s Boksburg campus to study for a three-year year Advanced Culinary Chef Programme.<\/p>\n<p>Two years later, after completing the practical component of the course, he left to take up a full-time job to work in the kitchen of a Bedfordview-based insurance company canteen.<\/p>\n<p>But then along came the dreaded Covid pandemic and lockdown and Ngwenya found himself retrenched and back home with time on his hands to think about his future.<\/p>\n<p>\u2018I decided that once the restrictions were lifted I would go back to my studies, so when it was all over I returned to Capsicum and completed my diploma,\u2019 he says.<\/p>\n<h4><strong>What dreams are made of<\/strong><\/h4>\n<p>Following his graduation in 2022, Ngwenya was offered a position with Food by Andrew Draper, a catering company based in Muldersdrift that he had always longed to work for, and it was while there that he was contacted by Capsicum during 2024 and offered the opportunity to interview with Qatar Airways for a position with their subsidiary company, Qatar Duty-Free.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-23184 size-full\" src=\"https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-scaled.jpg\" alt=\"\" width=\"1893\" height=\"2560\" srcset=\"https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-scaled.jpg 1893w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-296x400.jpg 296w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-757x1024.jpg 757w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-768x1039.jpg 768w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-1136x1536.jpg 1136w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-1514x2048.jpg 1514w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-310x420.jpg 310w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-696x941.jpg 696w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-1068x1445.jpg 1068w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2025\/02\/M_Ngwenya_3-1920x2597.jpg 1920w\" sizes=\"auto, (max-width: 1893px) 100vw, 1893px\" \/><\/p>\n<p>He got the job and now finds himself based in Doha, working as a Commis Chef in five outlet restaurants operating in the city\u2019s Hamad International Airport.<\/p>\n<p>\u2018I work the preparation areas for five eateries &#8211; Usta Doner, Wok to Walk, Jwala, Remman Caf\u00e9 and Baldna Express &#8211; sending out orders on the al-a-carte menu, ensuring stock levels meet daily production requirements, maintaining the rigorous food safety protocols that have been put in place and overseeing the quality of all the dishes sent out.<\/p>\n<p>\u2018My days are long, and I work full 12-hour shifts for five days a week. But I am enjoying it, working hard and learning a lot.\u2019<\/p>\n<p>On his days off, Ngwenya goes sightseeing and almost always finds a new restaurant to try out, savouring the mix of Arabic and Asian cuisines, many of them with strong Indian influences and flavours. The success of the event brought Grills to life and after my lectures, I\u2019d take it to the night markets in and around the East Rand.<\/p>\n<p>\u2018Grills is on hold until I return which will hopefully be sometime in 2028.\u2019<\/p>\n<p>So, is there anything else the guy from Brakpan misses apart from Grills?<\/p>\n<p>\u2018I miss my family,\u2019 he says. \u2018My mother and father still live in the same house and, of my sisters who inspired me to get into cooking, the eldest, Zandile, has started her own beauty boutique while my other sister, Nomaswasi, is working as an HR manager at a bank in Pretoria.
