R1 from each punnet of 250g whole white button mushrooms, 250g sliced white button mushrooms, the 250g budget line and the 400g whole white\u00a0 mushroom punnets sold, will be donated to Reach for Recovery\u2019s Ditto project. This remarkable initiative provides silicone prostheses to women who, after a mastectomy, cannot afford to purchase a breast prostheses.<\/p>\n<p>We\u2019ve found some delicious recipes where mushrooms are the star ingredient for you to try.<\/p>\n<h5><strong>Mushroom and Bok Choi Udon Noodle Bowls<\/strong><\/h5>\n<p><em>Serves 4-6<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>Broth:<\/strong><br \/>\n1 bunch spring onions, roughly chopped<br \/>\n1 cup button mushrooms, roughly chopped<br \/>\n\u00bc cup crumbled dried seaweed, such as kombu or wakame<br \/>\n1 thumb size chunk of ginger, crushed and unpeeled<br \/>\n2 whole, unpeeled garlic cloves, crushed<br \/>\n1 tsp sea salt flakes<\/p>\n<p><strong>Soup:<\/strong><br \/>\n500g udon noodles<br \/>\n2 Tbsp butter<br \/>\n1 cup chopped leeks<br \/>\n250g white button mushrooms, sliced<br \/>\n1 tsp ginger, grated<br \/>\n2 cloves garlic, finely grated<br \/>\n\u00bc cup mirin<br \/>\n1 tsp sesame oil<br \/>\n2 Tbsp soy sauce<br \/>\n100g baby bok choi, sliced down each centre<br \/>\n\u00bd cup white miso<br \/>\n4 spring onions, finely chopped, for garnish<\/p>\n<p><strong>Method:<\/strong><br \/>\nBegin with the broth: In a large pot, bring 2 litres of water to a boil over high heat. Add all of the broth ingredients. Reduce heat to a low simmer and cook for 20 minutes with the lid on. Strain and set aside.<br \/>\nMeanwhile, cook udon noodles until al dente, then drain and rinse under cold water to stop them cooking further.<br \/>\nIn a large pot, melt butter over medium heat. Add leeks and button mushrooms and saut\u00e9 until tender. Add ginger, garlic, mirin, sesame oil and soy sauce and cook for 1 minute. Pour in reserved broth and bring to a simmer.Add bok choi, udon noodles and miso and stir gently for 2 minutes until greens are cooked and noodles are heated through.<br \/>\nDivide noodles among bowls and ladle hot soup over. Place them facing up on a baking tray lined with baking paper.<br \/>\nIn a large frying pan over high heat saut\u00e9 the mushrooms in a little olive oil. When almost<br \/>\ncooked add the garlic and season well. Cook until the garlic is fragrant and the mushrooms are golden brown. Set the mushrooms aside on a cooling rack placed on top of a baking tray. This will allow the mushrooms to drain any excess liquid and not sweat.<br \/>\nIn a large bowl combine the barley, fresh herbs, cherry tomatoes and ricotta. Season and mix well. Drizzle the kale with a little olive oil and lemon juice. Season lightly with salt. Massage the kale leaves well. This tenderizes them and removes any bitterness. Set aside.<br \/>\nIn a large frying pan on high heat cook the mushrooms in a drizzle of olive oil. Season them to taste and keep warm.<br \/>\nCombine guacamole ingredients in a small jug. Using an immersion blender blend until very smooth.<br \/>\nAssemble the buddha bowl by beginning with a layer of quinoa. Top with kale, edamame beans, beetroot, zucchini ribbons, mushrooms, pickled onions and radish.<br \/>\nWhen ready to serve squeeze bowl with some fresh lemon juice and spoon over the creamy guacamole and use it as a rich and flavourful salad dressing.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-2479\" src=\"https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2019\/10\/Mushroom-Buddha-Bowl-2-Medium-400x267-400x267.jpg\" alt=\"\" width=\"400\" height=\"267\" \/><\/p>\n<h5><b>Beetroot Hummus with Warm Sesame Mushrooms\u00a0<\/b><\/h5>\n<p><em>Serves 4-6<\/em><b><\/b><\/p>\n<p><b>Ingredients:<\/b><\/p>\n<p>For the hummus:<br \/>\n1 x 400g can chickpeas, rinsed &amp; drained<br \/>\n\u00bd tsp bicarbonate of soda<br \/>\n2 medium beetroot, cooked (about 1 cup)<br \/>\n2 garlic cloves<br \/>\n1 heaped Tbsp tahini<br \/>\n1 Tbsp lemon juice<br \/>\n2 Tbsp olive oil<br \/>\n1 tsp ground cumin<br \/>\nSea salt flakes<\/p>\n<p><strong>For the Mushrooms:<\/strong><\/p>\n<p>250g portabellini mushrooms<br \/>\n1 garlic clove, minced<br \/>\nOlive oil<br \/>\nSesame oil<br \/>\n1 Tbsp sesame seeds, mixed<br \/>\nSalt &amp; pepper<br \/>\nFlatbread\/pita to serve<br \/>\n<b><\/b><\/p>\n<p><b>Method:<\/b><\/p>\n<p><em>To make the hummus:<\/em>\u00a0Put the chickpeas in a pot and cover with a few cm of water. Add the bicarbonate of soda and cook for 20 minutes until tender. Drain and rinse with cold water.<br \/>\nCombine all ingredients in a blender and blend until smooth. Add ice cold water if you do not have a strong blender and need more liquid.<br \/>\n<em>To make the mushrooms:<\/em>\u00a0Place a large frying pan on high heat. Drizzle a little olive oil and sesame oil into the pan. Fry the mushrooms until almost golden brown and then add the garlic and season with salt and pepper. Cook for a further 2 minutes until the garlic is golden brown.
