{"id":2484,"date":"2019-10-04T09:15:03","date_gmt":"2019-10-04T07:15:03","guid":{"rendered":"https:\/\/getitmagazine.co.za\/joburg-south\/?p=2484"},"modified":"2024-05-28T15:50:50","modified_gmt":"2024-05-28T13:50:50","slug":"mushroom-chickpea-and-sweet-potato-curry","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/joburg-south\/blog\/2019\/10\/04\/mushroom-chickpea-and-sweet-potato-curry\/","title":{"rendered":"Mushroom, Chickpea and Sweet Potato Curry"},"content":{"rendered":"<p><em>Serves 4-6<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 large red onion, finely diced<br \/>\n3 Tbsp red curry paste (about 80g)<br \/>\n2 cloves garlic, minced<br \/>\nThumb-size piece fresh ginger, grated<br \/>\n500g sweet potatoes, peeled and cut into large cubes<br \/>\n1 x 400ml tin coconut milk<br \/>\n1 x 400g tin chickpeas, drained and rinsed<br \/>\n1 x 400g tin chopped tomatoes<br \/>\n500g white button mushrooms, quartered<br \/>\n200g pack baby spinach<br \/>\nOlive oil<br \/>\nSalt and pepper<br \/>\nBunch fresh coriander, finely chopped<br \/>\nFresh lime wedges, to serve<br \/>\nWild rice, to serve<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Heat a drizzle of oil in a large saucepan over medium heat.<br \/>\nCook the onion and curry paste until the onion is soft and golden, stirring occasionally.<br \/>\nAdd the garlic and ginger and cook for another 2 minutes.<br \/>\nAdd the sweet potato, chickpeas, chopped tomatoes and coconut milk. Simmer for 15 minutes or until the sweet potatoes are tender and the sauce has thickened.
