{"id":4011,"date":"2020-04-17T08:48:25","date_gmt":"2020-04-17T06:48:25","guid":{"rendered":"https:\/\/getitmagazine.co.za\/joburg-south\/?p=4011"},"modified":"2024-05-28T15:59:44","modified_gmt":"2024-05-28T13:59:44","slug":"yummy-breakfast-egg-muffins","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/joburg-south\/blog\/2020\/04\/17\/yummy-breakfast-egg-muffins\/","title":{"rendered":"Yummy breakfast egg muffins"},"content":{"rendered":"<p><em>Makes 12<\/em><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>12 extra large eggs<br \/>\n125ml cream<br \/>\n\u00bd cup spring onions, chopped<br \/>\n2 cloves garlic, grated<br \/>\n1 chilli, diced<br \/>\n1 large red bell pepper, diced<br \/>\n1 cup corn, cut off the cob (or frozen)<br \/>\n2 cups baby spinach<br \/>\n60g (\u00bd cup) mozzarella, grated<br \/>\nSalt and pepper, to taste<br \/>\nOlive oil<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Preheat oven to 180\u02daC and grease a 12 cup cupcake tin.<br \/>\nAdd a drizzle of olive oil to a large frying pan.<br \/>\nAdd spring onion, garlic and chilli. Cook until fragrant.<br \/>\nAdd bell pepper and corn and cook until tender.<br \/>\nAdd spinach and cook until wilted and all water evaporates. Remove from the heat and stir through the cheese.<br \/>\nMeanwhile, whisk eggs and cream together. Season well.<br \/>\nEvenly distribute the veggies into the cupcake tin.<br \/>\nPour egg mixture over veggies.<br \/>\nBake in the oven for 20-25 minutes, or until golden and set.<br \/>\nServe warm and enjoy!<\/p>\n<p><strong>To freeze<\/strong><\/p>\n<p>Wrap cooked and cooled muffins tightly with cling film and place in a ziplock bag and freeze.<\/p>\n<p><strong>To reheat<\/strong><\/p>\n<p>Defrost muffins in the fridge or covered on the counter.<\/p>\n<p>Oven: Place muffins on a baking tray and reheat in the oven at 180\u02daC until warmed through.<\/p>\n<p>Microwave: For a quicker breakfast on the go option use the microwave. Place on a piece of paper towel on a microwave-safe plate.
