Spier Wine Farm shared their version with us.<\/p>\n<p>A little less sweet than usual \u2013 they leave out the dried fruit and apricot jam \u2013 this is a gorgeous savoury dish with a deliciously nutty, complex flavour. Serve it this weekend, with crisp white wine \u2026 we suggest the Spier Signature Chenin Blanc.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-4014\" src=\"https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/04\/Recipe-Signature-Chenin-Blanc-beef-bobotie-LR-2-267x400.jpg\" alt=\"\" width=\"267\" height=\"400\" srcset=\"https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/04\/Recipe-Signature-Chenin-Blanc-beef-bobotie-LR-2-267x400.jpg 267w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/04\/Recipe-Signature-Chenin-Blanc-beef-bobotie-LR-2-280x420.jpg 280w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/04\/Recipe-Signature-Chenin-Blanc-beef-bobotie-LR-2.jpg 500w\" sizes=\"auto, (max-width: 267px) 100vw, 267px\" \/><\/p>\n<h5><strong>No-raisin beef bobotie with curry leaves<\/strong><\/h5>\n<p><em>Serves 6<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>30 ml (2 tablespoons) vegetable oil<br \/>\n2 onions, finely chopped<br \/>\n2 cloves garlic, finely grated<br \/>\n15 ml (1 tablespoon) fresh ginger, finely grated<br \/>\n20 ml (4 teaspoons) mild curry powder<br \/>\n5 ml (1 teaspoon) ground turmeric<br \/>\n5 ml (1 teaspoon) ground coriander<br \/>\n5 ml (1 teaspoon) ground cumin<br \/>\n1 kg lean beef mince<br \/>\nsalt &amp; black pepper to taste<br \/>\n30 ml lemon juice<br \/>\n60 ml fruit chutney<br \/>\n30 ml Worcestershire sauce<br \/>\n30 ml tomato paste<br \/>\n2 slices white bread, soaked in water<br \/>\n125 ml milk<br \/>\n1 x egg<br \/>\n12 curry leaves (fresh or dried)<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>In a large pot, heat the oil over medium heat and add the onions. Fry until soft and translucent, then add the garlic and ginger and fry for another 30 seconds.<br \/>\nAdd the curry powder, turmeric, coriander and cumin, and fry, stirring, for a minute.<br \/>\nDivide the beef mince into 3 batches and add 1 batch at a time, turning up the heat to high and stirring after each addition and waiting for the meat to change colour from pink to grey (do not brown) before adding more.<br \/>\nWhen all the meat has changed colour, season generously with salt &amp; pepper, then add the lemon juice, chutney, Worcestershire sauce, tomato paste and soaked bread (break up the bread into chunks &#8211; it will continue to break down while cooking).<br \/>\nStir well, then turn down the heat to low and cover with a lid. Cook slowly for 25 minutes, scraping the bottom often to prevent burning. In the meantime, pre-heat your oven to 180 \u00b0C.<br \/>\nIn a medium jug, mix the milk and egg well and season with salt &amp; pepper.<br \/>\nWhen the meat mixture is ready, transfer it to a suitable deep baking dish and smooth the top evenly. Pour over the milky egg mixture and dot all over with curry leaves.<br \/>\nBake at 180 \u00b0C for 35 minutes or until golden and bubbly on top.<br \/>\nRemove and serve hot with rice, fresh coriander, toasted coconut, chutney and tomato salsa (or your choice of sambals).<\/p>\n<h4><strong>About the wine<\/strong><\/h4>\n<p><strong>Spier Signature Chenin Blanc<\/strong> is crisp and fruity Chenin Blanc, and is perfect with this mildly spiced bobotie.
