{"id":4700,"date":"2020-07-10T00:54:22","date_gmt":"2020-07-09T22:54:22","guid":{"rendered":"https:\/\/getitmagazine.co.za\/joburg-south\/?p=4700"},"modified":"2024-05-28T15:48:02","modified_gmt":"2024-05-28T13:48:02","slug":"cook-a-south-african-favourite-chicken-peri-peri","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/joburg-south\/blog\/2020\/07\/10\/cook-a-south-african-favourite-chicken-peri-peri\/","title":{"rendered":"Cook a South African favourite \u2013 chicken peri-peri"},"content":{"rendered":"<p>Capsicum Culinary Studio, has tasked its chef lecturers at their six campuses around the country to come up with delicious dishes for the whole family to enjoy.<\/p>\n<p>Chef Bernice Warner from the school\u2019s Port Elizabeth campus shares her recipe for delicious peri-peri chicken, providing recipes for both home-made peri-peri sauce as well as fried bread to accompany the feast.<\/p>\n<h4><strong>Peri-Peri Chicken<\/strong><\/h4>\n<p><em>(Serves 2)<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 tablespoon butter<br \/>\n200g boneless chicken breast fillets \u2013 skin removed and cubed<br \/>\n1 garlic clove \u2013 crushed<br \/>\n2 tablespoons homemade peri-peri sauce (see recipe below)<br \/>\nJuice of \u00bd lemon<br \/>\n125ml cooking cream<br \/>\nSalt and pepper to taste<br \/>\nGarnish with chopped parsley<br \/>\nServe with pan fried bread (recipe below) or crusty rolls<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>1. In a very hot skillet\/frying pan, melt the butter and fry the cubed chicken pieces until golden brown on both sides.<br \/>\n2. Add garlic and peri-peri sauce and allow to fry for another minute or so until fragrant then add the lemon juice and cream.<br \/>\n3. Season with salt and pepper and allow to simmer for 5 \u2013 7 min or until cooked.<br \/>\n4. Served with fried bread.<\/p>\n<p><strong>Pan fried bread:<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 cup of cake flour<br \/>\n5ml baking powder<br \/>\n15ml olive oil<br \/>\n125ml yoghurt<br \/>\nPinch of salt<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>1. Mix all the dry ingredients and stir in the wet ingredients, you might need to add a drop of water if you find the dough to be dry. The dough will need to be rolled out to approximately 1 cm thick on a lightly floured surface. Cut into rounds.<br \/>\n2. Fry in a medium to high frying pan with some cooking oil until golden on both sides and soft to the touch. Serve with the chicken.<\/p>\n<p><strong>Homemade Peri\u2013Peri sauce:<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>\u00bd cup white vinegar<br \/>\n\u00bd cup freshly squeezed lemon\/ lime juice<br \/>\n\u00bd cup olive oil<br \/>\n40ml chili powder<br \/>\n40ml paprika<br \/>\n40ml salt<br \/>\n40ml chopped garlic<br \/>\n10 bird\u2019s eye chilies, finely chopped, keep seeds in for the heat.<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>1. Put all the ingredients in a food processor and blend until well combined.
