{"id":5634,"date":"2020-08-31T09:49:00","date_gmt":"2020-08-31T07:49:00","guid":{"rendered":"https:\/\/getitmagazine.co.za\/joburg-south\/?p=5634"},"modified":"2024-05-28T15:47:46","modified_gmt":"2024-05-28T13:47:46","slug":"creamy-baked-chicken-breasts-with-mushrooms-parmesan-cheese","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/joburg-south\/blog\/2020\/08\/31\/creamy-baked-chicken-breasts-with-mushrooms-parmesan-cheese\/","title":{"rendered":"Creamy Baked Chicken Breasts with Mushrooms &amp; Parmesan Cheese"},"content":{"rendered":"<p>This mouth-watering Creamy Baked Chicken Breasts with Mushrooms &amp; Parmesan Cheese recipe, shared by The South African Mushroom Farmers\u2019 Association, will make for a hearty weeknight dinner.<\/p>\n<p><strong>Creamy Baked Chicken Breasts with Mushrooms &amp; Parmesan Cheese<\/strong><\/p>\n<p><em>Serves 4<\/em><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>15ml + 15ml olive oil<br \/>\n4 thick chicken breast fillets<br \/>\n3ml paprika<br \/>\n2 garlic cloves, crushed<br \/>\n300g portabellini mushrooms<br \/>\n60g butter<br \/>\n15ml cake flour<br \/>\n250ml chicken stock<br \/>\n250ml cream<br \/>\n80g parmesan cheese, grated<br \/>\n\u00bd bunch spinach, chopped<br \/>\nmilled black pepper<br \/>\n10ml lemon zest<br \/>\n30ml flat leaf parsley, chopped<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>1. Heat 15ml oil in a casserole and season each chicken breast with paprika.<br \/>\n2. Sear the chicken breasts for 3 \u2013 4 minutes per side. Transfer to a plate and set aside.<br \/>\n3. Add the remaining olive oil and fry the garlic and mushrooms.<br \/>\n4. Return the chicken breasts to the casserole and set aside.<br \/>\n5. Melt the butter in a pan stir in the flour until it thickens.<br \/>\n6. Whisk in the chicken stock, cream, half of the Parmesan cheese and cook for 3 \u2013 4 minutes.<br \/>\n7. Return the casserole to the stove and pour the cream sauce over the top. Cover and simmer for 5 \u2013 10 minutes, or until the chicken breasts are tender.<br \/>\n8. Add the spinach and let simmer for another 2 \u2013 3 minutes.<br \/>\n9. Season well with pepper, and add the lemon zest, parsley and top with the remaining Parmesan cheese.<br \/>\n10.
