There would be various salad options \u2013 potato salad, coleslaw, mixed salad and braai <em>broodjies<\/em>. Not forgetting dessert which would definitely be a peppermint fridge tart.<\/p>\n<p><strong>What are your favourite three South African dishes and why?<\/strong><br \/>\nPeppermint fridge tart \u2013 I am a pastry chef, but you cannot beat it, especially the next day.<br \/>\nMilk tart \u2013 So simple yet so satisfying.<br \/>\nPumpkin fritters \u2013 My mother-in-law makes these and honestly &#8211; with cinnamon sugar &#8211; they are the best thing.<\/p>\n<p>Sutherland shares one of her favourite Heritage Day recipes which incorporates an old favourite \u2013 milk tart \u2013 with a modern twist. It is taken from the Capsicum Culinary Studio recipe book.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-5926\" src=\"https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Macarons-400x267.jpg\" alt=\"\" width=\"400\" height=\"267\" srcset=\"https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Macarons-400x267.jpg 400w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Macarons-1024x683.jpg 1024w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Macarons-768x512.jpg 768w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Macarons-1536x1024.jpg 1536w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Macarons-2048x1366.jpg 2048w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Macarons-696x464.jpg 696w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Macarons-1068x712.jpg 1068w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Macarons-630x420.jpg 630w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Macarons-1920x1280.jpg 1920w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<h4><strong>Milk Tart Macarons<\/strong><\/h4>\n<p><strong>Milk tart filling:<\/strong><\/p>\n<p>250ml milk<br \/>\n60g egg yolks<br \/>\n63g sugar<br \/>\n25g cornflour<br \/>\n2 cinnamon sticks<\/p>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Heat the milk and cinnamon until boiling point<\/li>\n<li>Mix the egg yolks, sugar and cornflour until smooth<\/li>\n<li>Temper the hot milk onto the yolk mixture<\/li>\n<li>Return to the heat and allow the mixture to boil, continuously stirring<\/li>\n<li>Remove from the heat, strain (remove cinnamon sticks)<\/li>\n<li>Place in a bowl, with plastic wrap on the surface and allow to cool in the fridge<\/li>\n<\/ol>\n<p><strong>Macarons:<\/strong><\/p>\n<p>135g caster sugar<br \/>\n80g ground almonds<br \/>\n60g egg white<\/p>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Place the caster sugar and egg white in a bowl over a double boiler and cook it to liquid form (70\u00b0C).<\/li>\n<li>Remove from the heat and beat on high speed until medium peak.<\/li>\n<li>On a low speed beat in the ground almonds, colour until combined<\/li>\n<li>Pipe onto the silpat and bake for 7-10 minutes (depending how large they have been piped)<\/li>\n<li>Remove from the oven and allow to cool completely before taking them off the silpat or they with split in half.<\/li>\n<li>Fill and store in an airtight container in the fridge for up to 1 week<\/li>\n<\/ol>\n<p>NOTE: Do not flavour the macaron mixture, it will flop<\/p>\n<p><strong>To assemble:<\/strong> Spoon some of the cold milk tart filling onto a macaron and top with another.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-5914\" src=\"https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Vetkoek-400x384.jpg\" alt=\"\" width=\"400\" height=\"384\" srcset=\"https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Vetkoek-400x384.jpg 400w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Vetkoek-1024x983.jpg 1024w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Vetkoek-768x738.jpg 768w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Vetkoek-1536x1475.jpg 1536w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Vetkoek-696x668.jpg 696w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Vetkoek-1068x1026.jpg 1068w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Vetkoek-437x420.jpg 437w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Vetkoek-1920x1844.jpg 1920w, https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2020\/09\/Vetkoek-rotated.jpg 1995w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<h4><strong>Vetkoek<\/strong><\/h4>\n<p><em>(Yields 4)<\/em><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>125ml cake flour<br \/>\n2.5ml baking powder<br \/>\npinch\u00a0\u00a0 salt<br \/>\n\u00bc egg<br \/>\n62.5ml milk<br \/>\nOil for frying<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Sift dry ingredients into a mixing bowl.<\/li>\n<li>Whisk egg and add with milk, to dry ingredients.
