What better day to enjoy a fine meal and glass of wine with your family and friends.<\/strong><\/h3>\n<p>Muriate, the historic estate established in 1685 in the beautiful Knorhoek Valley north of Stellenbosch, is one of the oldest farms in South Africa.<\/p>\n<p>Annatjie Melck, chatelaine of Muratie, a well-known personality and a highly acclaimed foodie, together with her daughter-in-law Kim Melck, an accomplished cook, have ensured that Muratie\u2019s food and wine tradition is embodied in Muratie\u2019s popular Farm Kitchen Restaurant. The pair have shared two of their favourite recipes for us, to make and enjoy this Heritage Day \u2026\u00a0Waterblommetjie Bredie and Slow-Braised Karoo-Style Lamb Shanks. Cooked typically with lamb, the waterblommetjies (\u2018little water flowers\u2019) grow in dams and ponds in the Cape during winter and spring. Through long, slow cooking, the meat becomes extremely tender, perfectly complementing the subtle yet flavourful waterblommetjies and potatoes.<\/p>\n<p><strong>You need:<\/strong><\/p>\n<ul>\n<li>1kg lamb (a mixture of flatrib and thick rib)<\/li>\n<li>15ml brown vinegar<\/li>\n<li>Salt and freshly ground black pepper to taste<\/li>\n<li>A sprinkle of nutmeg<\/li>\n<li>2 big onions, roughly cut<\/li>\n<li>2 garlic gloves, finely chopped<\/li>\n<li>2,5kg waterblommetjies, thoroughly washed\/cleaned<\/li>\n<li>500g potatoes, peeled and sliced in wedges<\/li>\n<li>250ml warm water<\/li>\n<li>Lemon wedges for serving<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>How to clean the waterblommetjies:<\/strong><\/p>\n<p>Soak the waterblommetjies overnight in salt water. Rinse and clean thoroughly, removing any sand as well as any hard parts from the flowers and the leaves.<\/p>\n<p><strong>To make: <\/strong><\/p>\n<ul>\n<li>Sprinkle the vinegar over the meat and flavour with salt, pepper and nutmeg.<\/li>\n<li>Place the meat in a heavy bottomed pot with a little water, the onions and the garlic and braise the meat until it is nearly soft.<\/li>\n<li>Add the waterblommetjies to the meat and place the potato wedges on top of that. Flavour with salt, pepper and nutmeg to taste<\/li>\n<li>Add the hot water, cover the pot with the lid and let the stew cook slowly until the waterblommetjies and the potato wedges are soft.<\/li>\n<li>Keep boiling water on standby in case you might need more liquid, as the stew should not be cooked dry, and neither should it be like a pot of soup. Do not stir the bredie during the cooking process.<\/li>\n<li>Only stir the bredie prior to serving in order to mix together the waterblommetjies, potato and meat.<\/li>\n<li>Serve with white rice and lemon wedges<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-10391 size-medium alignleft\" src=\"https:\/\/getitmagazine.co.za\/ballito-umhlanga\/wp-content\/uploads\/sites\/4\/2021\/09\/Muratie-Laurens-Campher-Blended-White-108x400.jpg\" alt=\"\" width=\"108\" height=\"400\" \/><\/p>\n<ul>\n<li><strong>Perfect with a chilled glass of Muratie Laurens Campher <\/strong>Every wine tells a story at Muratie. \u00a0The Laurens Campher, Muratie\u2019s flagship white blend pays tribute to the first owner of Muratie, the passionate and determined young German soldier who fell in love with a slave-girl at the Castle in Cape Town. During their 14-year courtship, he frequently walked the 64 kilometres to Cape Town and back, a three-day trip, to see his sweetheart Ansela. Eventually Ansela was emancipated in 1699, whereupon she and Laurens married and, with their children, settled on the farm. They planted the first vineyards at Muratie and an oak tree, to bless their marriage, which still stands on Muratie, as does a small white house, their first home, which today houses the MOK Gallery. Here is Kim Melck\u2019s recipe for her famous fall-off-the-bone lamb shanks, a huge favourite at Muratie\u2019s Farm Kitchen restaurant.<\/p>\n<p><strong>You will nee<\/strong>d:<\/p>\n<ul>\n<li>4 x lamb shanks &#8211; each should weigh about 360g<\/li>\n<li>Oven roasting bag<\/li>\n<li>\u00bc cup balsamic vinegar<\/li>\n<li>\u00bd cup water<\/li>\n<li>\u00bc cup oil<\/li>\n<li>Medium coarse salt<\/li>\n<li>White pepper<\/li>\n<li>Fresh spring or two of rosemary<\/li>\n<\/ul>\n<p><strong>To make: <\/strong><\/p>\n<ul>\n<li>Pop the 4 shanks into the roasting bag, liberally sprinkle with the coarse salt and white pepper, be generous!!<\/li>\n<li>Add the water, oil and vinegar to the bag as well as the rosemary.<\/li>\n<li>Press any excess air out of the bag and tie with a bag tie or just knot.<\/li>\n<li>Lay the cooking bag containing the shanks in an oven roasting pan and roast at 180 degrees until soft to the touch and beautifully brown.<\/li>\n<li>Serve on a heap of creamy mashed potatoes, with sweet carrots on the side and green beans or baby peas.<\/li>\n<li><strong>Even more delicious with a glass of Muratie\u2019s Martin Melck Cabernet Sauvignon<\/strong><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-10395 size-medium alignleft\" src=\"https:\/\/getitmagazine.co.za\/ballito-umhlanga\/wp-content\/uploads\/sites\/4\/2021\/09\/Muratie-Martin-Melck-Cabernet-Sauvignon-NV-96x400.jpg\" alt=\"\" width=\"96\" height=\"400\" \/><\/p>\n<p>This wine honours Martin Melck, patriarch of the Melck clan in South Africa, one of the Cape\u2019s greatest landowners and most influential stock-and wine-farmers.
