Delicious, low-calorie mushrooms can be a cornerstone of those heart-conscious eating habits. Points in favour of consuming mushrooms:<\/p>\n<p>\u2022 A recent study, reviewed in Phytotherapy Research, concluded that adding edible mushrooms into your diet could help lower your blood pressure levels.<\/p>\n<p>\u2022 A 2010 research paper by Keith R Martin from the Healthy Lifestyles Research Center, College of Nursing and Health Innovation at Arizona State University, published in Nutrition Journal, found that \u201cdietary mushrooms can be protective against cardiovascular disease (CVD)\u201d.<\/p>\n<p>\u2022 Mushrooms contain vitamins C and D, which have long been associated with good cardiovascular health, as well as a unique heart-healthy type of fibre and potassium. Medical News Today notes \u201cthere is some evidence that consuming a type of fibre called beta-glucans may lower blood cholesterol levels. [And these] beta-glucans occur in the cell walls of many types of mushrooms.\u201d The journal also states, \u201cpotassium can help regulate blood pressure, and this may decrease the risk of hypertension and cardiovascular disease.\u201d<\/p>\n<p>All that being said, it\u2019s now obviously time for a salad \u2026 a mouth-watering Artichoke &amp; White Button Mushroom Salad packed with creamy fresh mushrooms and other satisfying umami flavours:<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>&nbsp;<\/p>\n<ul class=\"wprm-recipe-ingredients\">\n<li class=\"wprm-recipe-ingredient\" data-uid=\"0\"><span class=\"wprm-recipe-ingredient-amount\">500\u00a0<\/span><span class=\"wprm-recipe-ingredient-unit\">g<\/span>\u00a0<span class=\"wprm-recipe-ingredient-name\">white button mushrooms<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"1\"><span class=\"wprm-recipe-ingredient-amount\">60<\/span>\u00a0<span class=\"wprm-recipe-ingredient-unit\">ml\u00a0<\/span><span class=\"wprm-recipe-ingredient-name\">apple cider vinegar<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"2\"><span class=\"wprm-recipe-ingredient-amount\">60\u00a0<\/span><span class=\"wprm-recipe-ingredient-unit\">ml<\/span>\u00a0<span class=\"wprm-recipe-ingredient-name\">olive oil<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"3\"><span class=\"wprm-recipe-ingredient-amount\">\u00bc<\/span>\u00a0<span class=\"wprm-recipe-ingredient-name\">red onion, finely diced<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"4\"><span class=\"wprm-recipe-ingredient-amount\">\u00bd\u00a0<\/span><span class=\"wprm-recipe-ingredient-unit\">tsp\u00a0<\/span><span class=\"wprm-recipe-ingredient-name\">dried chilli flakes<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"5\"><span class=\"wprm-recipe-ingredient-amount\">1\u00a0<\/span><span class=\"wprm-recipe-ingredient-unit\">tsp\u00a0<\/span><span class=\"wprm-recipe-ingredient-name\">dried oregano<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"6\"><span class=\"wprm-recipe-ingredient-name\">Handful fresh coriander<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"7\"><span class=\"wprm-recipe-ingredient-amount\">200<\/span>\u00a0<span class=\"wprm-recipe-ingredient-unit\">g<\/span>\u00a0<span class=\"wprm-recipe-ingredient-name\">feta cheese<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"8\"><span class=\"wprm-recipe-ingredient-amount\">1\u00a0<\/span><span class=\"wprm-recipe-ingredient-name\">Mediterranean cucumber<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"9\"><span class=\"wprm-recipe-ingredient-amount\">100<\/span>\u00a0<span class=\"wprm-recipe-ingredient-unit\">g<\/span>\u00a0<span class=\"wprm-recipe-ingredient-name\">radish<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"10\"><span class=\"wprm-recipe-ingredient-amount\">1\u00a0<\/span><span class=\"wprm-recipe-ingredient-unit\">tin\u00a0<\/span><span class=\"wprm-recipe-ingredient-name\">artichoke hearts<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"11\"><span class=\"wprm-recipe-ingredient-amount\">80<\/span>\u00a0<span class=\"wprm-recipe-ingredient-unit\">g\u00a0<\/span><span class=\"wprm-recipe-ingredient-name\">mixed baby leaves<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\" data-uid=\"12\"><span class=\"wprm-recipe-ingredient-name\">Handful pumpkin seeds<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Method:<\/strong><\/p>\n<ol class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-3677-step-0-0\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Slice button mushrooms into quarters and place in a large mixing bowl. Drizzle the mushrooms with the vinegar, olive oil, chilli, oregano and a good amount of salt and pepper. Roughly chop the coriander and add that along with the red onion to the bowl. Toss well and set aside.<\/div>\n<\/li>\n<li id=\"wprm-recipe-3677-step-0-1\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>Using a mandolin (or very sharp knife) slice ribbons of cucumber and thin rounds of radish.<\/p>\n<p>Drain the artichoke hearts.<\/p>\n<p>Add the cucumber ribbons, radish and artichoke hearts to the large bowl of marinating mushrooms. Give everything a gentle toss.<\/p>\n<\/div>\n<\/li>\n<li id=\"wprm-recipe-3677-step-0-2\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>Arrange baby leaves in a large, shallow salad bowl.
