In fact, FAT <em>bastard<\/em> is so dedicated to celebrating the cultivar, they\u2019ve renamed the whole month #FbChardonMay! We\u2019re not arguing!<\/p>\n<p>TV Chef and food stylist Zola\u2019s Butter Bean &amp; Mushroom Curry, a creamy mild curry delicately spiced with garam masala and sweetened with a touch of chutney, perfectly complements the rich and velvety notes of FAT <em>bastard <\/em>Chardonnay<\/p>\n<p><strong>Zola Nene&#8217;s mushroom and butter bean curry with Fat Bastard chardonay<\/strong><\/p>\n<figure id=\"attachment_1285176\" aria-describedby=\"caption-attachment-1285176\" style=\"width: 361px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1285176\" src=\"https:\/\/caxtondigital.co.za\/wp-content\/uploads\/sites\/110\/2024\/05\/fatbastard2.jpg\" alt=\"\" width=\"361\" height=\"481\" \/><figcaption id=\"caption-attachment-1285176\" class=\"wp-caption-text\">Image supplied by FAT bastard wines<\/figcaption><\/figure>\n<p>Serves four; prep time 10 minutes; cooking time 30 minutes<\/p>\n<p><strong>You\u2019ll need: \u00a0<\/strong><\/p>\n<ul>\n<li>1 Tbs canola oil<\/li>\n<li>1 large onion, sliced<\/li>\n<li>8 curry leaves<\/li>\n<li>1-2 red chillies<\/li>\n<li>1 tsp cumin seeds<\/li>\n<li>1 tsp black mustard seeds<\/li>\n<li>2 Tbs garlic &amp; Ginger paste<\/li>\n<li>2 Tbs garam masala<\/li>\n<li>1 Tbs mild curry powder<\/li>\n<li>1 cup chopped tomatoes<\/li>\n<li>400g chopped mushrooms<\/li>\n<li>1 cup vegetable stock<\/li>\n<li>3 Tbs fruit chutney<\/li>\n<li>1 tin (400ml) coconut milk<\/li>\n<li>1 tin (400g) butterbeans, drained<\/li>\n<li>20g fresh coriander, chopped<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>Cooked rice to serve<\/li>\n<\/ul>\n<p><strong>To make:<\/strong><\/p>\n<p>Heat oil in a pot over medium heat.<br \/>\nAdd onions, curry leaves, whole red chilly, cumin seeds and mustard seeds, saut\u00e9 until onions soften and begin to brown.<\/p>\n<p>Add garam masala, curry powder, garlic and ginger paste and tomatoes, then saut\u00e9 for a minute to cook the spices.<br \/>\nStir in mushrooms to coat in the spices, deglaze with stock and leave to saut\u00e9 for a minute.<\/p>\n<p>Add fruit chutney and coconut milk then leave to simmer for 5 minutes.<\/p>\n<p>Stir in butter beans and chopped coriander then simmer for another 5 minutes.
