So why not start off this year by incorporating some healthy and delicious salads into your diet? Clover has the perfect summer salad that you can make for yourself or the whole family and you are guaranteed to be dishing up a second helping after your meal.<\/p>\n<p><em>The recipe is available in the Clover SA Food Favourites cookbook, which is filled with great, wholesome and truly South African recipes that will provide you with an omni-sensorial experience. The recipe book has in part been subsidized by Clover because we believe that good food and great memories shouldn\u2019t be limited by price. Also, by purchasing the cookbook, you will be actively helping ladies around South Africa achieve their business dreams through the Clover Mama Afrika project. The project aims to identify women who are already agents of change in their communities and helps train them to become self-sustaining women with skills which then they can use to derive income from, in order to support orphaned and abused children and the elderly and infirm.\u00a0<\/em><\/p>\n<p><strong>Crayfish salad<\/strong><\/p>\n<p>4 portions<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>900 g crayfish tails<\/p>\n<p>2,5 ml ( \u00bd tsp) salt<\/p>\n<p>\u00bd lemon, cut into wedges<\/p>\n<p>125 ml ( \u00bd cup) mayonnaise<\/p>\n<p>15 ml (1 tbsp) medium curry powder<\/p>\n<p>5 ml (1 tsp) paprika<\/p>\n<p>pinch ground ginger<\/p>\n<p>2 celery sticks, finely chopped<\/p>\n<p>lettuce for serving<\/p>\n<p>2 lemons, cut into wedges<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Heat some water in a large saucepan with the salt and lemon wedges until it boils.\u00a0 Place the crayfish tails in the saucepan and cook for 5 minutes.<\/li>\n<li>Remove the saucepan from the heat and leave the crayfish in the hot water for 30 minutes. Drain and allow to cool completely.<\/li>\n<li>Shell the meat from the crayfish tails and cut into cubes.<\/li>\n<li>Thoroughly mix the mayonnaise, curry powder, paprika and ginger. Stir in the celery.\u00a0 Stir this mixture into the crayfish cubes.<\/li>\n<li>Place lettuce on serving plates and spoon the crayfish mixture on top.
