{"id":5206,"date":"2020-03-24T12:01:52","date_gmt":"2020-03-24T10:01:52","guid":{"rendered":"https:\/\/getitmagazine.co.za\/joburg-west\/?p=5206"},"modified":"2024-05-31T09:17:06","modified_gmt":"2024-05-31T07:17:06","slug":"vegan-breakfast-tostadas","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/joburg-west\/blog\/2020\/03\/24\/vegan-breakfast-tostadas\/","title":{"rendered":"Vegan Breakfast Tostadas"},"content":{"rendered":"<p><em><strong>Serves 4<\/strong><\/em><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>8 Tortillas<\/li>\n<li>2 ripe avocados<\/li>\n<li>150g refried beans<\/li>\n<li>200g grilled mushrooms<\/li>\n<li>200g new potatoes, roasted<\/li>\n<li>200g cherry tomatoes halved<\/li>\n<li>Salsa and coriander to serve<\/li>\n<\/ul>\n<p><strong>Method for the tostada shells<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 200\u00b0c and spray two large baking sheets with cooking spray.<\/li>\n<li>Lightly spray both sides of the tortillas with cooking spray and place them in a single layer on the prepared baking sheets. Lightly season with salt.<\/li>\n<li>Bake for 5 minutes, flip over and bake for another 5-10 minutes until the tortillas are crispy.<\/li>\n<li>To serve: peel and slice the ripe avocados.
