This is one of my go-to recipes when I feel like comfort food.\u201d<\/p>\n<p><strong>FOUR-BEAN SOUP<\/strong><\/p>\n<p>Prep time: 20 minutes<br \/>\nCooking time: 30 minutes<br \/>\nTotal time: 50 minutes<br \/>\nServings: 4<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 tin of four bean mix in brine<\/li>\n<li>2 medium carrots sliced<\/li>\n<li>1 medium white onion, finely chopped<\/li>\n<li>\u00bd green pepper chopped<\/li>\n<li>1 teaspoon crushed ginger and garlic<\/li>\n<li>2 large tomatoes diced<\/li>\n<li>1 large sweet potato diced and roasted<\/li>\n<li>2 tablespoons butter<\/li>\n<li>1 packet (200g) of baby spinach<\/li>\n<li>Pinch ground cloves<\/li>\n<li>\u00bc teaspoon turmeric<\/li>\n<li>500ml chicken stock\/vegetable stock<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong><\/p>\n<ul>\n<li>Melt butter in a large stockpot over medium-high heat. Add the onions, carrots peppers, ground cloves and turmeric. Let it cook for 8-10 minutes until tender, stirring occasionally.<\/li>\n<li>Add the crushed garlic and ginger, diced tomatoes, beans, roasted sweet potatoes, chicken\/veg stock, as well as salt and pepper. Stir together and let come to a low boil.
