{"id":6097,"date":"2020-05-28T12:43:54","date_gmt":"2020-05-28T10:43:54","guid":{"rendered":"https:\/\/getitmagazine.co.za\/joburg-west\/?p=6097"},"modified":"2024-05-31T09:16:32","modified_gmt":"2024-05-31T07:16:32","slug":"celebrate-international-hamburger-day-with-these-burger-ideas","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/joburg-west\/blog\/2020\/05\/28\/celebrate-international-hamburger-day-with-these-burger-ideas\/","title":{"rendered":"Celebrate International Hamburger Day with these burger ideas"},"content":{"rendered":"<p><strong>Bacon, Feta &amp; Spinach Stuffed Portabellos<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><strong>\u00a0<\/strong><\/p>\n<p>10 portabello mushrooms<\/p>\n<p>250g streaky bacon<\/p>\n<p>300g baby spinach<\/p>\n<p>2 tsp butter<\/p>\n<p>200g feta cheese<\/p>\n<p>40g rocket<\/p>\n<p>1 Tbsp oregano, finely chopped<\/p>\n<p>Olive oil<\/p>\n<p>Sea salt flakes<\/p>\n<p>Freshly ground black pepper<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p>Steam the mushrooms on a wire rack fitted into a large pot, for about 5 minutes. Remove and place on a cooling rack and allow excess liquid to drain.<\/p>\n<p>Cut bacon into a chunky dice and fry until crispy. Add the butter and allow to caramelise and get a deep golden colour. Season well with pepper.<\/p>\n<p>Remove the bacon from the pan and cook the spinach in the bacon fat for a few minutes. Season with salt and pepper and allow to cool slightly.<\/p>\n<p>In a large mixing bowl add the crispy bacon bits, the cooked spinach, the fresh rocket torn into smaller pieces, the oregano and mix well. Crumble in the feta and give it a final toss.<\/p>\n<p>Generously spoon the mixture onto the portabellos and serve straight away.<\/p>\n<p><strong>Gin Pairing:<\/strong><\/p>\n<p>50ml Mirari Amber Gin<\/p>\n<p>Dehydrated orange slices<\/p>\n<p>150ml tonic water<\/p>\n<p>A few dashes of bitters<\/p>\n<p>Fill desired glass with ice and add the dehydrated orange slices. Pour in the Mirari Amber Gin and top with tonic water. Finish with a few dashes of bitters.<\/p>\n<p><strong>Gin Pairing Note:<\/strong><strong>\u00a0<\/strong><\/p>\n<p>A classic combination, the creamy and smoky flavours from the stuffed portobellos are well complemented by the sweet honey and orange notes of the Mirari Amber. Heat coconut oil in a pan and brown the wors mince, stirring often, about 7 minutes. Finely chop the mushroom stalks and add to the pan with the chilli. Canola\/olive oil, divided<\/p>\n<p>\u00be cup chopped onion<\/p>\n<p>2 garlic cloves, chopped<\/p>\n<p>5 regular or whole-wheat hamburger buns, toasted and divided<\/p>\n<p>400g white button mushrooms, sliced<\/p>\n<p>1x 400g tin lentils, drained<\/p>\n<p>4 tsp. mustard, divided<\/p>\n<p>2 tsp. chopped fresh thyme<\/p>\n<p>\u00bd tsp. freshly ground black pepper<\/p>\n<p>\u00bc tsp. salt<\/p>\n<p>2 large eggs, lightly beaten<\/p>\n<p>30g feta cheese, crumbled<\/p>\n<p>1 \u00bd tbsp. canola mayonnaise<\/p>\n<p>\u00bd cup rocket<strong>\u00a0<\/strong><\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Preheat the grill.<\/li>\n<li>Heat a large non-stick frying pan over medium-high heat. Add 1 tsp. of oil to pan; swirl to coat. Add onion and garlic; saut\u00e9 3 minutes or until onion is tender. Remove from heat.<\/li>\n<li>Place 1 bun in a food processor; process until coarse crumbs form. Remove breadcrumbs from food processor; set aside.<\/li>\n<li>Combine mushrooms, lentils, 2 teaspoons mustard, and the next 3 ingredients (through salt) in food processor; pulse to combine.<\/li>\n<li>Combine onion mixture, breadcrumbs, mushroom mixture, and eggs in a large bowl, stirring well. Divide mixture into 4 equal portions, gently shaping each into a 1.5cm-thick patty. Heat a large non-stick frying pan over medium-high heat.<\/li>\n<li>Add the remaining 2 teaspoons oil to pan; swirl to coat.<\/li>\n<li>Add patties; cook for 4 minutes on each side or until browned. Remove patties from pan; arrange in a single layer on a baking sheet.<\/li>\n<li>Sprinkle patties evenly with cheese. Place under grill for 2 minutes or until cheese is softened.<\/li>\n<li>Combine canola mayonnaise and remaining 2 teaspoons mustard in a small bowl. Spread the top half of each of the remaining 4 buns with 2 teaspoons mayonnaise mixture.<\/li>\n<li>Top each bottom half of bun with 1 patty.
