{"id":6712,"date":"2020-07-30T16:30:32","date_gmt":"2020-07-30T14:30:32","guid":{"rendered":"https:\/\/getitmagazine.co.za\/joburg-west\/?p=6712"},"modified":"2024-05-31T09:06:58","modified_gmt":"2024-05-31T07:06:58","slug":"raise-a-toast-to-good-ol-pot-roast","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/joburg-west\/blog\/2020\/07\/30\/raise-a-toast-to-good-ol-pot-roast\/","title":{"rendered":"Raise a toast to good ol\u2019 pot roast"},"content":{"rendered":"<h4><strong>Gather round the table and tuck into a tasty tummy-warmer to chase off winter\u2019s chill<\/strong><\/h4>\n<p style=\"font-weight: 400;\">From ouma Annatjie\u2019s kitchen \u2013 marinated beef pot roast perfectly paired with Muratie Martin Melck Cabernet Sauvignon<\/p>\n<h5 style=\"font-weight: 400;\"><strong>Marinated beef pot roast<\/strong><\/h5>\n<p style=\"font-weight: 400;\"><strong><em>You\u2019ll need:<\/em><\/strong><\/p>\n<p style=\"font-weight: 400;\">1kg of bolo, aitchbone or topside;<\/p>\n<p style=\"font-weight: 400;\">110g bacon cut into 5mm pieces;<\/p>\n<p style=\"font-weight: 400;\">2 tsps salt;<\/p>\n<p style=\"font-weight: 400;\">1 Tblsp canola oil;<\/p>\n<p style=\"font-weight: 400;\">2 onions, cut into slices;<\/p>\n<p style=\"font-weight: 400;\">2 carrots, grated;<\/p>\n<p style=\"font-weight: 400;\">1 Tblsp cake flour<\/p>\n<p style=\"font-weight: 400;\"><strong><em>Marinade:<\/em><\/strong><\/p>\n<p style=\"font-weight: 400;\">150ml beer of your choice;<\/p>\n<p style=\"font-weight: 400;\">50ml canola oil;<\/p>\n<p style=\"font-weight: 400;\">1 Tblsp honey;<\/p>\n<p style=\"font-weight: 400;\">4 whole peppercorns;<\/p>\n<p style=\"font-weight: 400;\">2 whole cloves;<\/p>\n<p style=\"font-weight: 400;\">1 bay leaf<\/p>\n<p style=\"font-weight: 400;\"><strong><em>Method:<\/em><\/strong><\/p>\n<p>Use a larding needle to lard the beef with the bacon.<\/p>\n<p>Mix the marinade \u2013 beer, honey, pepper, cloves and bay leaves \u2013 in a big glass casserole. Place the beef in the casserole and marinate for 12 \u2013 24 hours, turning regularly.<\/p>\n<p>Remove beef from the marinade but keep marinade aside. Dry meat with paper towels. Season with salt by rubbing into the meat.<\/p>\n<p>Heat the oil in a heavy duty saucepan and brown meat thoroughly on all sides. Add the onions and grated carrots to the pot.<\/p>\n<p>Heat the marinade and add to the meat. Bring to boiling point, then lower the temperature and simmer until the meat is soft \u2013 approximately\u00a0 1 1\/2 \u2013 2 hours.<\/p>\n<p>Turn the meat once or twice during this time.
