New Roodeberg Reserve, a blend of the finest wines in the cellar, is the perfect freezing-day food companion &#8230; think meaty casseroles, roasts and game dishes. An intense and richly textured wine, its intricate layers of red plum, blueberries, crushed herbs and tobacco leaf with hints of dark chocolate are rounded off by soft, silky tannins. The wine infuses rich flavour when added to hearty winter dishes like this one, from foodie Elmarie Berry.<u><\/u><u><\/u><\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><strong><i><span lang=\"EN-GB\">You\u2019ll need:<\/span><\/i><\/strong><u><\/u><u><\/u><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">2,5kg oxtail; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Olive oil; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">2 onions, diced; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">2 Tblsps soy sauce; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">A few sprigs fresh rosemary; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">4 bay leaves; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">1 glass Roodeberg Reserve; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">1 cup beef stock; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Finely grated rind of 1 orange; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">200g pitted green olives; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">200g button mushrooms<u><\/u><u><\/u><\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><strong><i><span lang=\"EN-GB\">Method:<\/span><\/i><\/strong><u><\/u><u><\/u><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Preheat oven to 200\u00b0C. <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Heat the olive oil and fry the onion until soft. <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Spoon it out and add oxtail to the hot pan. The recipe was shared by Spier Hotel &#8230; it\u2019s winter food at its best. Serve it with a bottle of Spier Creative Block 3. Subtle, perfumed notes of blackcurrant, blackberry, raspberry, pomegranate and mulberry are followed by spicy flavours of black pepper and coriander &#8230; it\u2019s a silky, rich mouthful.<u><\/u><u><\/u><\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><strong><i><span lang=\"EN-GB\">You\u2019ll need:<\/span><\/i><\/strong><u><\/u><u><\/u><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">30 ml (2 Tblsps) vegetable oil; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">4 medium-large lamb shanks, trimmed of excess fat; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">1 large white onion, diced; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">2 large carrots, peeled &amp; finely chopped; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">6 garlic cloves, finely grated; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Salt and freshly ground black pepper, to taste; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">500 ml (2 cups) beef stock; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">375 ml (1.5 cups) good red wine; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">4 large tomatoes, chopped; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">30 ml (2 Tblsps) tomato paste; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">4 sprigs rosemary; <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">4 sprigs thyme;<u><\/u><u><\/u><\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">5 bay leaves<u><\/u><u><\/u><\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><strong><i><span lang=\"EN-GB\">Method:<\/span><\/i><\/strong><u><\/u><u><\/u><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Preheat the oven to 160 \u00b0C. <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Heat the oil in a large, wide oven-proof pot over medium-high heat. <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Brown the shanks on all sides, then remove from pot and set aside. <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Add the onions and carrots to the pot and fry over medium heat until softened, then add garlic and cook for one minute. <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Return the shanks to the pot and season generously with salt and pepper. Add stock, wine, chopped tomatoes, tomato paste and herbs. <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Bring to a simmer, then cover the pot with a lid. Transfer to the oven and cook for 2 \u00bd &#8211; 3 hours, or until the meat starts falling off the bone.<u><\/u><u><\/u><\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Remove shanks from pot and set aside. <\/span><\/p>\n<p class=\"m_4054640534141358049captions\"><span lang=\"EN-GB\">Discard bay leaves and herbs from the sauce and place pot on stove.
