Add onion, garlic, breadcrumbs, spices, and herbs to the ground meat and combine. Mix in beaten egg, milk, and parmesan to bind together.<\/p>\n<p>Divide mixture into 12 equal portions. Place a single cube of butter into each portion (as the meatball cooks, the butter melts and adds moisture to the meatball).<\/p>\n<p>Shape the meatball around the butter cube forming a ball. Evenly coat each meatball in olive oil, place on a prepared baking tray and refrigerate for an hour.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-8656\" src=\"https:\/\/getitmagazine.co.za\/joburg-west\/wp-content\/uploads\/sites\/21\/2021\/03\/Photo-3-280x400.jpg\" alt=\"\" width=\"280\" height=\"400\" srcset=\"https:\/\/getitmagazine.co.za\/joburg-west\/wp-content\/uploads\/sites\/21\/2021\/03\/Photo-3-280x400.jpg 280w, https:\/\/getitmagazine.co.za\/joburg-west\/wp-content\/uploads\/sites\/21\/2021\/03\/Photo-3-717x1024.jpg 717w, https:\/\/getitmagazine.co.za\/joburg-west\/wp-content\/uploads\/sites\/21\/2021\/03\/Photo-3-768x1097.jpg 768w, https:\/\/getitmagazine.co.za\/joburg-west\/wp-content\/uploads\/sites\/21\/2021\/03\/Photo-3-696x995.jpg 696w, https:\/\/getitmagazine.co.za\/joburg-west\/wp-content\/uploads\/sites\/21\/2021\/03\/Photo-3-294x420.jpg 294w, https:\/\/getitmagazine.co.za\/joburg-west\/wp-content\/uploads\/sites\/21\/2021\/03\/Photo-3.jpg 1000w\" sizes=\"auto, (max-width: 280px) 100vw, 280px\" \/><\/p>\n<p><strong>To make monster sliders:\u00a0<\/strong>Preheat oven to 180\u00b0C. Fry meatballs in a little oil, over medium-high heat, till half done. Once firm, gently press down using the back of a fork or spatula.<\/p>\n<p>Slice 12 mini buns in half horizontally. Place bottom halves cut side up, onto a prepared baking tray. Place a meatball on each roll. Top meatballs with a tomato-based pasta sauce, add a couple of fresh basil leaves and grated cheddar and mozzarella. Place bun tops over the meatballs and bake for 10 to 15 minutes or until cheese has melted and sauce is heated through.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-8658\" src=\"https:\/\/getitmagazine.co.za\/joburg-south\/wp-content\/uploads\/sites\/18\/2021\/03\/Photo-4-400x296.jpg\" alt=\"\" width=\"400\" height=\"296\" \/><\/p>\n<h4><strong>Chef Chantel Williams\u2019s Asian chicken meatballs with a dipping sauce:<\/strong><\/h4>\n<p><strong>You\u2019ll need:<\/strong>\u00a0500g chicken fillets; 2-3 garlic cloves, crushed; 3g fresh ginger, peeled and chopped; 3 tbsp fresh coriander, chopped; 1-2 red or green chillis, deseeded<\/p>\n<p><strong>How to:<\/strong>\u00a0Place all the ingredients in a food processor and combine until you get a smooth consistency.
