Who knew zucchini could somehow become irresistible in bread? This quick and easy treat is perfect for breakfast or even for an afternoon snack. It’s dangerously delicious, so why not give it a try?
You’ll need: ⅓ cup Nuts About Cooking Coconut oil; ¾ cup honey; 1 egg; 1 cup grated zucchini; 1 tsp vanilla essence; ½ cup Greek Yogurt, plain, low-fat; 1 ½ cups white whole wheat flour; ¼ tsp salt; 1 tsp baking soda; 1 tsp cinnamon; 1 cup chopped walnuts or pecans (optional)
Preheat oven to 165˚C.
In a large mixing bowl, cream Nuts About Cooking Coconut oil and honey. Add egg, zucchini, yoghurt, and vanilla, mix on low until combined. Combine dry ingredients and add to batter. Mix on medium speed just until combined, then stir in nuts.
Spray a standard-size loaf pan with non-stick cooking spray or grease well. Pour batter into loaf pan. Bake for 50-55 minutes or until a knife inserted in the centre of the loaf comes out clean.
Allow cooling for 15 minutes in the pan before removing and cooling completely on a wire rack. Cut into slices and enjoy!
