By 1800 it meant a \u201choax or cheat\u201d and by mid-century the use of the term \u201cOh, fudge!\u201d was used as a kid-friendly expletive especially when something had been messed up. It\u2019s\u00a0believed\u00a0that the first batch of fudge was created when someone was trying to make caramel, didn\u2019t get it right and exclaimed, \u201cOh, fudge.\u201d The name stuck.<\/li>\n<li>The earliest mention of fudge dates to 1888 when\u00a0American Emelyn Battersby Hartridge wrote a letter describing her introduction to the sweet treat through a friend&#8217;s cousin.<\/li>\n<li>While the Americans claim fudge as their own invention, some think it is an offshoot of a confectionary from Scotland called tablet. Tablet, which is made with sugar, condensed milk and butter was first noted in\u00a0The Household Book of Lady Grisell Baillie\u00a0in the early 18th century.<\/li>\n<\/ul>\n<figure id=\"attachment_1232508\" aria-describedby=\"caption-attachment-1232508\" style=\"width: 420px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-thumbnail wp-image-1232508\" src=\"https:\/\/caxtondigital.co.za\/wp-content\/uploads\/sites\/110\/2023\/06\/Lady_Grisell_Baillie-420x519.jpg\" alt=\"\" width=\"420\" height=\"519\" \/><figcaption id=\"caption-attachment-1232508\" class=\"wp-caption-text\">Lady Grisell Baillie<\/figcaption><\/figure>\n<ul>\n<li>The record for the largest slab of fudge in the world weighed\u00a0over 2,600 kilograms and\u00a0was made at the Northwest Fudge Factory in Canada in 2010 and took a full week to make.<\/li>\n<li>Fudge is a drier\u00a0version of fondant that is usually found in confectionery like peppermint thins.<\/li>\n<li>A tiny island in Michigan in the US considers itself the fudge capital of the world. There are over a dozen fudge shops on Mackinac Island which is just seven square kilometres in size with a population of around 500. The oldest fudge shop on the island &#8211;\u00a0Murdick\u2019s Candy Kitchen &#8211; opened in 1887.<\/li>\n<li>During peak season, Mackinac Island churns out over 4,535 kilograms of fudge daily. Every August, the island hosts the\u00a0Mackinac Island Fudge Festival, complete with events like Fudge on the Rocks where local bartenders craft fudge cocktails and festivalgoers are referred to as &#8220;fudgies.&#8221;<\/li>\n<li>Mamie Eisenhower, the wife of the 34th US President Ike Eienshower (1953-61) was a huge fudge fan and crafted her own recipe named\u00a0Mamie\u2019s Million-Dollar Fudge which included chopped nuts and marshmallow cr\u00e8me.<\/li>\n<li>Good fudge is all about the sugar crystals. Big sugar crystals make fudge taste grainy while very tiny sugar crystals result in a creamy, sweet fudge that tastes like, well, great fudge.<\/li>\n<\/ul>\n<p>Now that you&#8217;re inspired, try out one (or all) of these recipes from the chefs at <a href=\"https:\/\/www.capsicumcooking.com\/\">Capsicum Culinary Studio<\/a>, South Africa\u2019s leading culinary school.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Amarula Fudge \u2013 for the grown-ups only!<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-1232509\" src=\"https:\/\/caxtondigital.co.za\/wp-content\/uploads\/sites\/110\/2023\/06\/Amarula_fudge-420x630.jpg\" alt=\"\" width=\"420\" height=\"630\" \/><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1 cup\u00a0white sugar<\/p>\n<p>1 can sweetened condensed milk<\/p>\n<p>80ml Amarula (you can also use Baileys, Kahlua, Tia Maria etc.)<\/p>\n<p>2 cups white chocolate chips<\/p>\n<p>10 large marshmallows<\/p>\n<p>1 teaspoon\u00a0vanilla extract<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Grease a 20cm x 20cm tin and set aside. Using a large saucepan, combine the sugar and condensed milk and cook on medium heat until the sugar has completely dissolved. Stir in the white chocolate chips until melted. Stir in the Amarula and marshmallows. After the marshmallows have completely melted, add the vanilla extract and beat vigorously for a minute. Pour the fudge mixture into the tin and allow to cool (approx 1 hour) before cutting into squares.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Carrot Cake Fudge<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-1232510\" src=\"https:\/\/caxtondigital.co.za\/wp-content\/uploads\/sites\/110\/2023\/06\/Carrot_Cake_fudge-420x236.jpg\" alt=\"\" width=\"420\" height=\"236\" \/><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>680g\u00a0white chocolate chips<\/p>\n<p>1\u00a0tin condensed milk<\/p>\n<p>2\u00bd tablespoons\u00a0pureed carrot (use baby food)<\/p>\n<p>\u00bd teaspoon\u00a0cinnamon<\/p>\n<p>\u00bc teaspoon\u00a0nutmeg<\/p>\n<p>1 teaspoon vanilla extract<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Grease a 20cm x 20cm tin and set aside. Using a large saucepan, melt the white chocolate chips and condensed milk over medium heat until smooth and combined, stirring often. Add the carrot baby food, cinnamon and nutmeg and stir continuously making sure the mixture does not burn. After fudge thickens and large bubbles start to appear, remove from heart and vigorously beat in the vanilla extract for about 1 minute. Pour into the tin and<\/p>\n<p>let it cool for at least an hour before cutting into squares.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Chilli Fudge <\/strong>(also one for the adults only!)<\/p>\n<p><strong> <img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-1232511\" src=\"https:\/\/caxtondigital.co.za\/wp-content\/uploads\/sites\/110\/2023\/06\/Chilli_fudge-420x634.jpg\" alt=\"\" width=\"420\" height=\"634\" \/><\/strong><\/p>\n<p><strong>Ingredients<br \/>\n<\/strong>1 tin condensed milk<br \/>\n120g unsalted butter<br \/>\n250g light brown sugar<br \/>\n270g white chocolate<br \/>\n\u00bc tsp salt<br \/>\n\u00bd tsp chilli flakes (use less or more depending on your palate)<br \/>\n\u00bd tsp of vanilla essence<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Method<br \/>\n<\/strong>On a low heat, stir the condensed milk, butter and sugar until melted. Turn heat up to medium-high and continue stirring until it bubbles and thickens.
