{"id":2504,"date":"2019-10-10T14:46:48","date_gmt":"2019-10-10T12:46:48","guid":{"rendered":"https:\/\/getitmagazine.co.za\/lowveld\/?p=2504"},"modified":"2024-05-30T15:55:47","modified_gmt":"2024-05-30T13:55:47","slug":"baked-fish-with-mushroom-caponata","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/lowveld\/blog\/2019\/10\/10\/baked-fish-with-mushroom-caponata\/","title":{"rendered":"Baked Fish with Mushroom Caponata"},"content":{"rendered":"<p><strong>Serves 4-6<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 onions, diced<\/li>\n<li>2 green peppers, chopped<\/li>\n<li>500g white button mushrooms, sliced<\/li>\n<li>100g black kalamata olives, pitted &amp; sliced in half<\/li>\n<li>50g capers<\/li>\n<li>3 Tbsp tomato paste<\/li>\n<li>2 Tbsp water<\/li>\n<li>1 Tbsp balsamic vinegar<\/li>\n<li>1 tsp dried oregano<\/li>\n<li>Salt &amp; pepper<\/li>\n<li>Olive oil<\/li>\n<li>700g white fish, filleted &amp; deboned<\/li>\n<li>1 tsp dried oregano<\/li>\n<li>2 cloves garlic, finely minced<\/li>\n<li>350g baby potatoes, to serve<\/li>\n<li>Fresh dill, for serving<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<ol>\n<li>Heat a drizzle of olive oil in a nonstick frying pan and saut\u00e9 the onion until tender. Add the green pepper and mushrooms and simmer over medium-high heat for a few minutes until all the water is cooked out of the mushrooms.<\/li>\n<li>Add the tomato paste and oregano and cook for 2 minutes. Add the water and vinegar and simmer. Finally, add the olives and capers and taste for seasoning. Simmer for a few minutes to blend flavours.<\/li>\n<li>Preheat oven to 220\u02daC, move rack to the top third of the oven and line a baking tray with baking paper.<\/li>\n<li>Brush the baking paper with olive oil and place the fish on top.<\/li>\n<li>Season the fish well with salt, pepper and oregano. Drizzle the top with olive oil and spread the garlic evenly over the fillets.
