{"id":3344,"date":"2020-03-19T14:45:05","date_gmt":"2020-03-19T12:45:05","guid":{"rendered":"https:\/\/getitmagazine.co.za\/lowveld\/?p=3344"},"modified":"2024-05-30T15:55:46","modified_gmt":"2024-05-30T13:55:46","slug":"lemon-chiffon-cake-with-the-compliments-of-miz-gooz-berry","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/lowveld\/blog\/2020\/03\/19\/lemon-chiffon-cake-with-the-compliments-of-miz-gooz-berry\/","title":{"rendered":"Lemon chiffon cake &#8211; with the compliments of Miz Gooz Berry"},"content":{"rendered":"<p>Berry Legg of Miz Gooz Berry, the quaint establishment we featured in this month&#8217;s <em>Get It Lowveld<\/em>, very kindly shared her recipe for her divine lemon chiffon cake with us.<\/p>\n<p>A light chiffon cake with a citrus flavour, ideal for summer, this can be served with cream, custard or berry coulis.<\/p>\n<p>Preheat oven at 180\u00b0C.<\/p>\n<p>Ingredients:<\/p>\n<p>\u2022 500ml cake flour<br \/>\n\u2022 375ml sugar<br \/>\n\u2022 15ml baking powder<br \/>\n\u2022 5ml fine salt<br \/>\nSieve all dry ingredients together in a mixing bowl.<br \/>\nMake a hole in the centre.<br \/>\nAdd the following, beating after each ingredient:<br \/>\n\u2022 125ml sunflower oil<br \/>\n\u2022 190ml cold water<br \/>\n\u2022 7 extra-large eggs&#8217; yolk (place the egg whites in a clean, grease-free bowl)<br \/>\n\u2022 10ml freshly grated lemon rind<br \/>\n\u2022 10ml vanilla essence<br \/>\nEnsure that it is all beaten and that no lumps remain.<\/p>\n<p>Method:<\/p>\n<p>Using a clean whisk beater, beat the egg whites with 2,5ml cream of tartar, until medium peaks are formed.<br \/>\nFold the egg whites in three batches into the cake batter using a spatula. Do not bang the spatula against the side of the bowl.<br \/>\nPour into an ungreased chiffon pan (this pan has a loose bottom with a funnel in the centre and it has legs around the top edge for standing once the cake is removed from oven Bundt pan). If you do not have a chiffon pan, use two round, ungreased, 23cm springform pans.<br \/>\nPlace in the centre of the oven for approximately 35 minutes. Ensure there are no draughts in the kitchen, as oven temperatures can drop.<br \/>\nRound pans should be inverted onto a cooling rack once baked. Two single pans will bake faster than the chiffon pan.<br \/>\nTest the cake with a long skewer. The skewer must come out clean.<br \/>\nOnce baked, remove from the oven and invert immediately to allow the cake to hang upside down until it is completely cool. Release the cake from the pan with a flat-edged knife.<\/p>\n<p>Finish:<\/p>\n<p>\u2022 375ml icing sugar<br \/>\n\u2022 Freshly grated rind of 1 large lemon<br \/>\nSqueeze lemon and use sufficient icing sugar to form a thick glaze.<br \/>\nPlace glaze on the cake.<br \/>\nDecorate with fresh, seasonal fruit and food-safe flowers.<\/p>\n<p>This cake will serve eight generous slices.
