A perfectly ripe, silky-smooth avocado, cut into bite-sized cubes, seasoned with a little sea salt, freshly ground black pepper and a spritz of fresh lemon or lime juice makes the best chunky guacamole!<\/strong><\/p>\n

And you can add fresh herbs, grated garlic, crushed chilli flakes, leftover corn, diced pickles like gherkins or piquant\u00e9 peppers, beans, chickpeas or peanuts. Even finely chopped fruit such as fresh pineapple and chargrilled nectarines add a dash of cheeky sweetness to this most savoury of sides.<\/p>\n

Chunky guac is an amazing menu accompaniment! On top of a seared steak or schnitzel, maize meal or mopane worms, alongside a slice of pizza, pie or even a plain old ham and cheese sandwich. It\u2019s that fabulously funky flash of luxe, the side that saves even the most mundane of meals.<\/p>\n

Then ease in with a chunky guacamole side to your regular roast, or whatever you have planned tonight \u2013 stir fry, sausages or stew! Spicy chunky guacamole <\/strong><\/p>\n

Serves 4 <\/em><\/p>\n

You\u2019ll need: <\/strong>2 avocados, peeled and stoned; 15g coriander, chopped; juice of 1 lemon; 1 teaspoon chilli flakes; salt and pepper, to taste<\/p>\n

How to: <\/strong><\/p>\n

Dice the avocados, and place in a bowl with the chopped coriander.<\/p>\n

Squeeze over the lemon juice and season to taste.<\/p>\n

Mix lightly and serve.<\/p>\n
