EVOO is a very versatile oil as it can be used in both sweet or savoury dishes, and since the oil can withstand very high temperatures, it is ideal for any form of cooking. EVOO is unique in that the antioxidants and nutrients do not break down during the culinary process, therefore not only does it add nutritional value to any dish, but its natural compounds elevate and complement all other ingredients.<\/span><\/p>\n<p><span lang=\"en-US\">Whether you choose to drizzle, dip, bake or fry with EVOO this festive season, be sure to look out for the\u00a0<a href=\"https:\/\/www.saolive.co.za\/ctc-scheme\" target=\"_blank\" rel=\"noopener noreferrer\" data-auth=\"NotApplicable\" data-safelink=\"true\" data-linkindex=\"0\">CTC seal<\/a>\u00a0when purchasing your EVOO. This seal has been introduced by the SA Olive Industry and appears on olive oils of participating SA Olive members to ensure that the consumer chooses the best quality locally produced oils.<\/span><\/p>\n<p><span lang=\"en-US\">To give you some inspiration, below are three tasty dishes for you to try using EVOO and olives this festive season.<\/span><\/p>\n<p><b><u><span lang=\"en-US\">CITRUS OLIVE OIL CAKE BY LIZNA<\/span><\/u><\/b><\/p>\n<p><span lang=\"en-GB\"><strong>Ingredients<\/strong><\/span><\/p>\n<ul type=\"disc\">\n<li><span lang=\"en-US\">4 Eggs<\/span><\/li>\n<li><span lang=\"en-US\">1 cup brown sugar<\/span><\/li>\n<li><span lang=\"en-US\">\u00bd tsp salt<\/span><\/li>\n<li><span lang=\"en-US\">zest of one orange<\/span><\/li>\n<li><span lang=\"en-US\">zest of one lemon<\/span><\/li>\n<li><span lang=\"en-US\">1 \u00be cups flour<\/span><\/li>\n<li><span lang=\"en-US\">1 \u00bd tsp baking powder<\/span><\/li>\n<li><span lang=\"en-US\">\u00be cup Extra Virgin Olive Oil (EVOO)<\/span><\/li>\n<li><span lang=\"en-US\">105 ml melted butter<\/span><\/li>\n<li><span lang=\"en-US\">Dry icing sugar<\/span><\/li>\n<\/ul>\n<p><span lang=\"en-GB\"><strong>Method<\/strong><\/span><\/p>\n<ul type=\"disc\">\n<li><span lang=\"en-US\">Pre-heat the oven to 180 degrees Celsius, grease and line a cake pan.<\/span><\/li>\n<li><span lang=\"en-US\">Beat the eggs, sugar and zest till creamy. Whisk the butter and EVOO together, set aside. Sift the flour, baking powder and salt. Alternate adding the flour and EVOO to the egg mixture until everything is combined.<\/span><\/li>\n<li><span lang=\"en-US\">Transfer the batter to the pan and bake for around 30 minutes. When a cake tester \/ toothpick comes out clean your cake is ready.<\/span><\/li>\n<li><span lang=\"en-US\">Turn your cake out of the pan onto a cooling rack and let cool completely.<\/span><\/li>\n<li><span lang=\"en-US\">Dust the icing sugar over the cake and decorate with some rosemary and dried citrus slices.<\/span><\/li>\n<li><span lang=\"en-US\">Serve with a great cup of rooibos tea!<\/span><\/li>\n<\/ul>\n<p><b><u><span lang=\"en-US\">SMOKED TROUT AND OLIVE FRITTATA BY CHRISTINE CAPENDALE<\/span><\/u><\/b><\/p>\n<p><b><u><span lang=\"en-US\"><br \/><\/span><\/p>\n<ul type=\"disc\">\n<li><span lang=\"en-GB\">8 free range eggs<\/span><\/li>\n<li><span lang=\"en-GB\">80 ml milk<\/span><\/li>\n<li><span lang=\"en-GB\">40 ml Extra Virgin Olive Oil (EVOO)<\/span><\/li>\n<li><span lang=\"en-GB\">1 medium onion, sliced and saut\u00e9ed in a bit of EVOO until cooked and caramelised<\/span><\/li>\n<li><span lang=\"en-GB\">250 ml\u00a0 grated cheddar cheese<\/span><\/li>\n<li><span lang=\"en-GB\">180g flaked hot-smoked trout<\/span><\/li>\n<li><span lang=\"en-GB\">15 olives, pips removed and halved<\/span><\/li>\n<li><span lang=\"en-GB\">15ml chopped dill<\/span><\/li>\n<li><span lang=\"en-GB\">Salt and black pepper to taste<\/span><\/li>\n<li><span lang=\"en-GB\">More dill for garnish<\/span><\/li>\n<\/ul>\n<p><span lang=\"en-GB\"><strong>Method<\/strong><br aria-hidden=\"true\" \/><\/span><\/p>\n<ul type=\"disc\">\n<li><span lang=\"en-GB\">Preheat oven to 180 \u02daC<\/span><\/li>\n<li><span lang=\"en-GB\">Add the EVOO to a large greased or non-stick frying pan and heat slightly<\/span><\/li>\n<li><span lang=\"en-GB\">Beat together the eggs, milk and the salt and pepper<\/span><\/li>\n<li><span lang=\"en-GB\">Pour the egg mixture into the frying pan (heat must be low), place lid on and cook for a few minutes (about 4 minutes)<\/span><\/li>\n<li><span lang=\"en-GB\">Remove the lid and sprinkle the cheese, onion, smoked trout and olives over the half-cooked egg.<\/span><\/li>\n<li><span lang=\"en-GB\">Place the pan into the oven (cover the handle with a wet cloth or aluminium foil to prevent it from burning or scorching if it\u2019s not oven-proof)<\/span><\/li>\n<li><span lang=\"en-GB\">Bake in the oven for about 5 minutes until the egg is set<\/span><\/li>\n<li><span lang=\"en-GB\">Sprinkle the chopped dill over just before serving<\/span><\/li>\n<\/ul>\n<p><span lang=\"en-GB\">\u00a0<\/span><\/p>\n<p><b><u><span lang=\"en-US\">BAKED CHICKEN WITH POTATOES AND 2560px\" \/><span lang=\"en-GB\"><strong>Ingredients<\/strong><\/span><\/p>\n<ul type=\"disc\">\n<li><span lang=\"en-US\">1 Braai pack of chicken washed and cut into smaller pieces if required<\/span><\/li>\n<li><span lang=\"en-US\">4 medium potatoes cut in inched cubes<\/span><\/li>\n<li><span lang=\"en-US\">Handful or two of local olives drained from brine<\/span><\/li>\n<li><span lang=\"en-US\">1 large stem of rosemary (approx 10cm or more)<\/span><\/li>\n<li><span lang=\"en-US\">4 large cloves of garlic crushed<\/span><\/li>\n<li><span lang=\"en-US\">Salt and pepper<\/span><\/li>\n<li><span lang=\"en-US\">4 tbsp of Extra Virgin Olive Oil (EVOO)<br aria-hidden=\"true\" \/><br aria-hidden=\"true\" \/><\/span><\/li>\n<\/ul>\n<p><span lang=\"en-GB\"><strong>Method<\/strong><\/span><\/p>\n<ul type=\"disc\">\n<li><span lang=\"en-US\">Start with a heavy based casserole or pot that is oven safe.<\/span><\/li>\n<li><span lang=\"en-US\">Add 4 Tbsp of EVOO to the pot and place this on the stove at a medium to high heat.<\/span><\/li>\n<li><span lang=\"en-US\">Whilst this warms up, evenly season your chicken and potatoes on all sides with a little salt and pepper.<\/span><\/li>\n<li><span lang=\"en-US\">Place the chicken skin side down in the pan and cook until this is well browned, with a lid on.<\/span><\/li>\n<li><span lang=\"en-US\">Preheat the oven to 200C.<\/span><\/li>\n<li><span lang=\"en-US\">Mix the crushed garlic in the EVOO and brush over the chicken.<\/span><\/li>\n<li><span lang=\"en-US\">Turn the chicken over, add the potatoes and rosemary leaves to the pan and repeat the browning process.<\/span><\/li>\n<li><span lang=\"en-US\">Add the olives to the pan.<\/span><\/li>\n<li><span lang=\"en-US\">Taste and adjust for seasoning.<\/span><\/li>\n<li><span lang=\"en-US\">Place the plan into the oven without a lid for about 10 to 15 minutes or until the potatoes become crispy.<\/span><\/li>\n<li><span lang=\"en-US\">Remove from the oven and serve immediately with some artisanal bread a fresh salad, or cous cous.<\/span><\/li>\n<li><span lang=\"en-US\">Top tip: If you need a gravy, remove all the contents from the pan, and put the pan back on the stove.
