{"id":22344,"date":"2025-10-16T09:01:05","date_gmt":"2025-10-16T07:01:05","guid":{"rendered":"https:\/\/getitmagazine.co.za\/?p=20116"},"modified":"2025-10-16T10:01:00","modified_gmt":"2025-10-16T08:01:00","slug":"stone-fruit-caprese-salad-with-bocconcini-basil-pesto-drizzle","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/pretoria\/blog\/2025\/10\/16\/stone-fruit-caprese-salad-with-bocconcini-basil-pesto-drizzle\/","title":{"rendered":"Stone fruit caprese salad with bocconcini and basil pesto drizzle\u00a0"},"content":{"rendered":"<h4><strong>Stone fruit make an excellent substitution for tomatoes in this spin on the traditional Italian favourite. <\/strong><\/h4>\n<p>With a looser texture pesto, some peppery rocket leaves and a generous amount of salt flakes, this seasonal salad will become a regular in your repertoire, especially served with the Field &amp; Flutter Chenin Blanc.<\/p>\n<p><strong>Ingredients: (serves 6)<\/strong><\/p>\n<p><strong>For the pesto drizzle:<\/strong><\/p>\n<p>40 g (2 punnets) fresh basil leaves<\/p>\n<p>2 Tbsp pine nuts, lightly toasted<\/p>\n<p>\u00bc\u202fcup finely grated parmesan cheese<\/p>\n<p>salt &amp; pepper, to taste<\/p>\n<p>a squeeze of lemon juice<\/p>\n<p>about 60-80 ml extra virgin olive oil, plus extra<\/p>\n<p><strong>For assembling:<\/strong><\/p>\n<p>6 ripe nectarines or peaches, sliced or quartered (pips removed)<\/p>\n<p>250-300 g bocconcini cheese, halved<\/p>\n<p>2-3 Tbsp pine nuts, lightly toasted<\/p>\n<p>a handful fresh wild rocket leaves<\/p>\n<p>salt flakes &amp; freshly ground pepper, to taste<\/p>\n<p>balsamic vinegar, to serve (optional)<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p><strong>Prepare the pesto:<\/strong> In the bowl of a food processor, add the basil, nuts, cheese, some salt &amp; pepper, lemon juice and 60 ml olive oil. Blend to a loose pesto consistency, adding more oil if needed. Cover and set aside until ready to serve (refrigerate if making ahead more than an hour before serving).<\/p>\n<p><strong>Assemble the salad:<\/strong> On a large platter, arrange the stone fruit, bocconcini, pine nuts and rocket leaves. Season with salt &amp; pepper, then drizzle all over with pesto dressing.
