{"id":22433,"date":"2025-11-24T10:02:52","date_gmt":"2025-11-24T08:02:52","guid":{"rendered":"https:\/\/getitmagazine.co.za\/?p=20592"},"modified":"2025-11-24T11:40:08","modified_gmt":"2025-11-24T09:40:08","slug":"trout-tartare-with-roe-capers-lime-aioli-and-dill","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/pretoria\/blog\/2025\/11\/24\/trout-tartare-with-roe-capers-lime-aioli-and-dill\/","title":{"rendered":"A symphony of the sea recipe (and the perfect wine to pair)"},"content":{"rendered":"<h4><strong>Light and bright, this trout tartare with roe, capers, lime aioli and dill pairs wonderfully with Spier Brut Cap Classique. <\/strong><\/h4>\n<p>It&#8217;s certainly going on our holiday menu!<\/p>\n<p><strong>Trout tartare with roe, capers, lime aioli and dill recipe:<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>400 g very fresh trout fillet portions, pinboned and skinless<\/li>\n<li>\u00bd English cucumber, peeled &amp; diced<\/li>\n<li>shallot, finely chopped<\/li>\n<li>4 tablespoons baby capers<\/li>\n<li>3 Tbsp chives, finely chopped<\/li>\n<li>45 ml (3 Tbsp) extra virgin olive oil<\/li>\n<li>salt &amp; pepper, to taste<\/li>\n<li>a few strands dill roughly chopped if large<\/li>\n<li>a few teaspoons trout roe<\/li>\n<li>lime wedges, for serving<\/li>\n<\/ul>\n<p><strong>For the lime &amp; dill aioli:<\/strong><\/p>\n<ul>\n<li>2 egg yolks<\/li>\n<li>2-3 Tbsp lime juice<\/li>\n<li>1 Tbsp Dijon mustard<\/li>\n<li>1 small clove garlic<\/li>\n<li>salt &amp; pepper, to taste<\/li>\n<li>\u2153 cup canola oil<\/li>\n<\/ul>\n<p>a few strands dill, roughly chopped<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p><strong>Prepare the aioli:<\/strong> In a tall cup, add the yolks, lime juice, mustard, garlic and some salt &amp; pepper. Using a stick blender, blend well. Now add the oil in a thin stream while blending continuously, until the aioli is thick. Add the dill and blend until incorporated. Set aside (or refrigerate until ready to use).<\/p>\n<p><strong>Prepare the tartare:<\/strong> Using a very sharp long bladed knife, cut the trout as neatly as possible into small cubes and place in a medium mixing bowl. Add the diced cucumber, chopped shallot, capers ad chives.<\/p>\n<p>Drizzle with oil and season with salt &amp; pepper, then stir gently to mix. Plate the mixture on individual plates, the use a teaspoon or a piping bag to pipe small blobs of aioli all round the edges. Top the aioli with roe, then finish with dill and a few lime wedges.
