{"id":2805,"date":"2019-10-13T09:00:46","date_gmt":"2019-10-13T07:00:46","guid":{"rendered":"https:\/\/getitmagazine.co.za\/pretoria\/?p=2805"},"modified":"2024-05-30T15:41:59","modified_gmt":"2024-05-30T13:41:59","slug":"mushroom-and-bok-choi-udon-noodle-bowls-for-days","status":"publish","type":"post","link":"https:\/\/getitmagazine.co.za\/pretoria\/blog\/2019\/10\/13\/mushroom-and-bok-choi-udon-noodle-bowls-for-days\/","title":{"rendered":"Mushroom and Bok Choi Udon Noodle Bowls for days!"},"content":{"rendered":"<p>Serves 4-6<\/p>\n<p>Ingredients:<\/p>\n<p>Broth:<\/p>\n<ul>\n<li>1 bunch spring onions, roughly chopped<\/li>\n<li>1 cup button mushrooms, roughly chopped<\/li>\n<li>\u00bc cup crumbled dried seaweed, such as kombu or wakame<\/li>\n<li>1 thumb size chunk of ginger, crushed and unpeeled<\/li>\n<li>2 whole, unpeeled garlic cloves, crushed<\/li>\n<li>1 tsp sea salt flakes<\/li>\n<\/ul>\n<p>Soup:<\/p>\n<ul>\n<li>500g udon noodles<\/li>\n<li>2 Tbsp butter<\/li>\n<li>1 cup chopped leeks<\/li>\n<li>250g white button mushrooms, sliced<\/li>\n<li>1 tsp ginger, grated<\/li>\n<li>2 cloves garlic, finely grated<\/li>\n<li>\u00bc cup mirin<\/li>\n<li>1 tsp sesame oil<\/li>\n<li>2 Tbsp soy sauce<\/li>\n<li>100g baby bok choi, sliced down each centre<\/li>\n<li>\u00bd cup white miso<\/li>\n<li>4 spring onions, finely chopped, for garnish<\/li>\n<\/ul>\n<p>Method:<\/p>\n<ul>\n<li>Begin with the broth: In a large pot, bring 2 litres of water to a boil over high heat. Add all of the broth ingredients. Reduce heat to a low simmer and cook for 20 minutes with the lid on. Strain and set aside.<\/li>\n<li>Meanwhile, cook udon noodles until al dente, then drain and rinse under cold water to stop them cooking further.<\/li>\n<li>In a large pot, melt butter over medium heat. Add leeks and button mushrooms and saut\u00e9 until tender. Add ginger, garlic, mirin, sesame oil and soy sauce and cook for 1 minute. Pour in reserved broth and bring to a simmer.Add bok choi, udon noodles and miso and stir gently for 2 minutes until greens are cooked and noodles are heated through.<\/li>\n<li>Divide noodles among bowls and ladle hot soup over.
